- Blend 5 cups of any chopped fruit (we used strawberries, cantaloupe, pineapple, honeydew, watermelon and mango) with 3 cups water, 1/2 cup sugar and 2 tablespoons lime juice. Add more sugar and/or lime juice to taste and serve over ice.

A luscious tropical drink perfect for lifting you out of the summer doldrums. May be made up to a week ahead and stored in the refrigerator.

Steps:
- Choose very ripe fruit; peel, seed, and coarsely chop.
- Smoothly puree measured fruit pulp and juice (a portion at a time, if needed) in blender with sugar and lime juice.
- Add flavored fruit mixture to water, then rub through a fine strainer into a large jar or pitcher and discard pulp.
- Pour the agua fresca over ice cubes into tall glasses.
- Slices or chunks of matching fruit may be added as garnish just before serving.

MEXICAN STRAWBERRY WATER (AGUA DE FRESA)
Fresh fruit waters, or Aguas de Frutas, made with crushed or blended fruit are a common and popular drink all over Mexico. This recipe is extremely flavorful and refreshing, especially when fresh strawberries are in season.

- In a medium bowl, mix together sliced strawberries, sugar, and 1 cup of water. Cover the bowl with plastic wrap and place in the refrigerator for 4 hours.
- Remove the strawberry mixture from the refrigerator and pour into a blender. Blend on high until smooth. Pour the blended berry mixture through a wire mesh strainer set over a large mixing bowl; discard the pulp and seeds.
- Add the remaining 7 cups cold water to the pureed strawberries and mix well. Place the Aqua de Fresa in the refrigerator to chill for several hours or pour over ice and serve immediately. Garnish with lime slices or mint leaves.

AGUA FRESCA DE JAMAICA
Steps:
- Place the hibiscus in a bowl, rinse thoroughly with cold water, and drain. Cover with 4 cups cold water, add allspice berries, if using, and soak for 4 to 12 hours. Strain through a fine mesh sieve into a pitcher, pressing firmly and then discarding solids. Add 4 cups water and then sweeten to taste with sugar or agave syrup.
