PERI PERI AFRICAN CHICKEN

Peri Peri African Chicken image

This is a great spicy marinade recipe, a traditional African dish, great for BBQ. Nice with salad and fries, but I like adding it to a pita with salad and garlic Greek yogurt (3/4 cup Greek yogurt and 3 cloves of crushed garlic with finely chopped chives). Don't go on a date though, gives you wicked garlic breath!

GRILLED CHICKEN BREASTS WITH NORTH AFRICAN SPICE PASTE

Grilled Chicken Breasts With North African Spice Paste image

Though there are plenty of chiles in this paste, they don't overpower it. The aromatic bite of coriander, the earthiness of cumin and the licorice trace of caraway seeds create a pleasingly complex flavor. This paste is also delicious with pork. (So says Gourmet Magazine. ;)) Chicken rubbed with spice paste can marinate, covered and chilled, up to 4 hours before grilling. Spice paste keeps, covered and chilled, up to 1 week. See notes below for directions using a gas grill. SPECIAL EQUIPMENT: an electric coffee/spice grinder or mortar and pestle; a 17- by 12- by 3-inch aluminum roasting pan (if using charcoal).

African cuisine is known for its delicious, spicy and flavourful dishes that are rooted in the continent’s rich history and cultural diversity. One of the most popular African dishes is grilled chicken, which is marinated in spices and herbs to create a delicious, bold taste. In this article, we will share some valuable tips to help you create the perfect African grilled chicken breast recipes.

Tip #1: Use Authentic African Spices and Herbs

To make a truly authentic African grilled chicken dish, it is important to use the right spices and herbs. Some of the most commonly used spices and herbs in African cuisine include cumin, coriander, paprika, turmeric, and ginger. These spices can be blended together to create a unique seasoning that can be used to marinate chicken before grilling. In addition, fresh herbs such as parsley, thyme, and rosemary can also be added to the marinade to enhance the flavour of the chicken.

Tip #2: Marinate the Chicken Breast

Before grilling the chicken breast, it is important to marinate it in a mixture of spices, herbs and other ingredients for at least 2-3 hours, or preferably overnight. This will allow the chicken to absorb the flavours of the marinade and become more tender and juicy. A good marinade for African grilled chicken can be made using ingredients such as yoghurt, lemon juice, garlic, ginger, and a variety of spices and herbs.

Tip #3: Use a Charcoal Grill

A charcoal grill is the best option for making authentic African grilled chicken as it creates the perfect smoky flavour that is characteristic of African cuisine. To properly grill the chicken, it is important to use indirect heat, where the coals are placed on one side of the grill and the chicken is placed on the other side. This will prevent the chicken from burning and help it cook evenly.

Tip #4: Baste the Chicken While Grilling

Basting the chicken while it is grilling is an excellent way to add more flavour and moisture to the meat. This can be done using a mixture of ingredients such as melted butter, lemon juice, and herbs, which are brushed over the chicken periodically as it grills. This basting also helps to enhance the smoky flavour of the grilled chicken.

Tip #5: Serve with African Side Dishes

African grilled chicken is best served with authentic African side dishes such as rice pilaf, roasted sweet potatoes, and vegetable stews. These side dishes complement the rich and spicy flavours of the grilled chicken and make for a delicious and satisfying meal.

Tip #6: Experiment with Different Flavours

While there are many traditional African grilled chicken recipes, it is also important to experiment with different flavours and ingredients to create your own unique dish. You can add ingredients such as honey, soy sauce, or even fruit juices to the marinade to create a sweet and tangy flavour. You can also try using different types of spices and herbs to create a unique and delicious seasoning.

Tip #7: Use High-Quality Chicken Breast

To create the best African grilled chicken, it is important to use high-quality chicken breast that is fresh and free from any preservatives or additives. This will ensure that the chicken is tender and juicy, and can absorb the flavours of the marinade more effectively. Organic or free-range chicken breast is always recommended.

Tip #8: Cut the Chicken Breast Evenly

To ensure that the chicken is evenly cooked, it is important to cut the chicken breast into even-sized pieces. This will also help to ensure that the chicken cooks faster, as larger pieces of chicken take longer to cook than smaller pieces.

Conclusion

Making delicious African grilled chicken breast recipes is easy when you follow these valuable tips. Always use the right spices and herbs, marinate the chicken, use a charcoal grill, baste the chicken while grilling, serve with African side dishes, experiment with different flavours, use high-quality chicken breast, and cut the chicken evenly. With these tips, you can create a flavourful and authentic African dish that will impress your family and friends.
