ACORN SQUASH SOUP

Acorn Squash Soup image

Provided by Guy Fieri

Categories     appetizer

Time 2h40m

Yield 8 to 10 servings

Number Of Ingredients 15

3 whole acorn squash, approximately 8 cups when cooked
6 shallots, 1 cup diced, 3 left whole and peeled
6 garlic cloves, peeled
3 tablespoons olive oil, plus 1/3 cup extra-virgin olive oil
1 tablespoon salt
1 tablespoon pepper, freshly cracked, plus more for seasoning
1 stick unsalted butter, in all
4 cups chicken stock, low-sodium
1/4 teaspoon cayenne
1/4 teaspoon white pepper
1 teaspoon sage, dry
1 teaspoon savory
1 cup heavy cream
1 tablespoon Worcestershire sauce
1/3 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Cut the squash in half on the equator and remove the seeds with a spoon. Cut a flat spot on each end so the squash will sit flat. Line a baking sheet with aluminum foil and arrange the squash, cut side up. To 3 of the squash halves, add a peeled shallot and to the other 3 add 2 garlic cloves on each. Drizzle with 2 tablespoons of olive oil and season with 1 tablespoon each of the salt and freshly cracked pepper. Roast in the hot oven until very tender and starting to caramelize and collapse, approximately 1 hour. Remove from oven and when cool enough to handle, remove the squash from the skin. Reserve the roasted shallots and garlic with the squash. Can be done ahead.
  • In a large Dutch oven, heat 1 tablespoon of the olive oil and 2 tablespoons of the butter over medium-high heat and when the butter is starting to foam, add the raw diced shallots and saute until they are starting to caramelize, about 5 to 6 minutes. Deglaze with 1/2 cup of the chicken stock and stir to remove any fond. Reduce the heat to medium-low and add in the reserved squash, roasted shallots and garlic and then the remaining chicken stock. Stir to combine, then puree with a stick blender. The mixture will be very thick. Add in the cayenne, white pepper and the herbs. Stir in the cream and Worcestershire sauce and heat slowly over medium-low heat. When the mixture comes to a slow simmer, mix again with the stick blender and stir in 1/4 cup of the Parmesan and turn heat to low. Serve with a fresh crack of black pepper, a nice drizzle of extra-virgin olive oil and a light sprinkle of remaining Parmesan. Ladle into soup bowls and serve.

SPICY VEGAN ACORN SQUASH SOUP

Spicy Vegan Acorn Squash Soup image

This is a delicious vegetarian/vegan stew I made while experimenting one night. It's very low fat and delicious! The squash and yam are very mellow, almost sweet flavors, but the Indian spices (especially the chile powder!) give it some kick. The preparation time is probably exaggerated... I'm just learning to cook, but it is a lot of veggie chopping. It's well worth it, though!

When the colder months arrive, nothing beats a warm and comforting bowl of soup. One soup that should definitely be on your list to try is acorn squash soup. The nutty and slightly sweet flavor of the acorn squash makes for a delicious and comforting soup. Here are some valuable tips to keep in mind when making acorn squash soup recipes.

Choosing the Right Squash

The first step to making the perfect acorn squash soup is to choose the right squash. When selecting your acorn squash, look for ones that are heavy for their size, have a matte finish (indicating ripeness), and are free from blemishes or soft spots. The squash should feel firm to the touch and have a hard, deep green skin.

Prepping the Squash

Once you've chosen your squash, you'll need to prep it for cooking. Start by washing the outside of the squash and patting it dry. Next, slice off the top and bottom of the squash with a sharp knife. Cut the squash in half lengthwise and scoop out the seeds and stringy flesh with a spoon. You can save the seeds for roasting later. Finally, slice the squash into smaller sections for easier roasting or boiling.

Roasting vs. Boiling

There are two main ways to cook acorn squash before making soup: roasting and boiling. Roasting brings out the natural sweetness and intensifies the flavor of the squash. To roast, preheat your oven to 400°F, and place the squash pieces on a baking sheet lined with parchment paper. Drizzle olive oil over the squash and season with salt and pepper to taste. Roast for 30-40 minutes or until the squash is tender and slightly caramelized. Boiling is a quicker method if you're short on time. Place the squash pieces in a pot of water and bring to a boil. Cook for about 15-20 minutes or until the squash is tender. Regardless of the method you choose, be sure the squash is fully cooked before adding it to the soup.

Harmonizing Flavors

To make a flavorful and satisfying soup, it's important to balance the flavors of the ingredients. Acorn squash soup can be sweet or savory, depending on the seasonings you use. Common ingredients to season acorn squash soup include garlic, onion, vegetable or chicken broth, cinnamon, nutmeg, ginger, thyme, sage, and rosemary. To bring balance to your soup, start with sautéing onion and garlic in olive oil until they are tender and slightly caramelized. Letting them sweat will bring out the natural sweetness and add depth to the soup. Next, add your cooked squash pieces and seasonings. Stir well and let the flavors meld together on low heat. Add broth or water to achieve the desired consistency.

Creamy or Chunky?

Acorn squash soup can be served either creamy or chunky, depending on your preference. For a creamy soup, you'll need to puree the cooked squash in a blender, food processor, or immersion blender until smooth. Be sure to let the soup cool slightly before blending, as hot liquids can cause an explosion in the blender. If you prefer a chunky soup, leave the squash pieces as is or roughly mash them with a potato masher. Adding other ingredients like cooked rice, quinoa, or beans can also give the soup more texture and heartiness.

Garnishing and Serving

Once your soup is ready, it's time to garnish and serve. Popular garnishes for acorn squash soup include croutons, chopped nuts, fresh herbs, sour cream, yogurt, or grated cheese. You can also drizzle some olive oil or balsamic glaze over the top for added flavor. When serving, consider pairing the soup with crusty bread, a green salad or roasted vegetables for a complete and satisfying meal. Acorn squash soup can be enjoyed as a starter or main dish, making it a versatile and tasty addition to any winter meal plan.

Storing and Reheating

If you have leftovers, store the soup in airtight containers in the refrigerator for up to four days. To reheat, simply heat the soup in a pot over medium heat until it's warmed through. Be sure to stir occasionally to prevent sticking or burning. If the soup has become too thick or gloopy, you can add a bit of broth or water to thin it out.
In Conclusion
Making acorn squash soup is a delicious and easy way to enjoy the flavors of the winter season. Whether you prefer it creamy or chunky, sweet or savory, there are endless ways to customize this soup to your liking. By keeping these tips in mind, you'll be well on your way to making the perfect bowl of acorn squash soup.
