DELIGHTFUL FRUIT SALAD
"As much or as little Cool Whip can be added - to taste. If I have some mandarin oranges or maraschino cherries, I add a few to the top. I used this recipe as a salad, but my friends say it is good enough to be a dessert!" -Elaine Bailey, Bloomfield, Indiana

Acini di pepe fruit salad is all about the fruit, so it's crucial to choose your fruit wisely. You want to select fruits that are ripe, juicy, and flavorful. Some of the best fruits to use in this recipe include strawberries, blueberries, kiwi, mango, pineapple, and grapes. These fruits all have a lovely sweetness that pairs well with the creamy dressing and acini di pepe pasta. You can also add other fruits like raspberries, blackberries, cantaloupe, honeydew, or peaches, depending on your personal preferences.Tips:
- Choose fruits that are in season for maximum flavor and freshness
- Make sure the fruit is ripe and not overripe or underripe
- Wash and dry your fruit before cutting
- Cut your fruit into bite-size pieces for easy mixing and serving
Getting the Pasta Right
The acini di pepe pasta is the other component that makes this salad unique. These tiny pasta pearls cook quickly and easily, but the key to getting them just right is to make sure that they are not overcooked, mushy, or undercooked. The pasta should be tender but still slightly firm to the bite. You can cook the pasta according to the package instructions, but be sure to check it frequently and not let it overcook.Tips:
- Cook your pasta in a large pot of salted boiling water
- Stir the pasta regularly to prevent sticking
- Test the pasta frequently to ensure it is cooked al dente
- Rinse the pasta under cold running water to stop the cooking process and prevent clumping
- Drain the pasta well before adding it to the fruit and dressing
Make the Dressing First
The dressing is a critical component of this salad, as it provides the creamy and tangy flavor that complements the sweetness of the fruit and the pasta. To make the dressing, you should mix all the ingredients in a bowl and whisk well until everything is well combined. Preparing the dressing first allows it to chill and set while you cook the pasta and cut the fruit. This way, it will be easier to mix with the pasta and fruit, and the flavors will have time to meld together.Tips:
- Use high-quality ingredients for the dressing
- Whisk the dressing well to ensure it is smooth and well combined
- Chill the dressing in the refrigerator while you prepare the other ingredients
Mix Everything Together
Once you have cooked the pasta, cut the fruit, and made the dressing, it's time to mix everything together. Add the pasta and fruit to a large mixing bowl and pour the dressing over the top. Gently toss everything together until the pasta and fruit are well coated with the dressing. Be careful not to overwork the mixture as this can cause the fruit to break down and become mushy.Tips:
- Use a large mixing bowl to prevent the salad from spilling over the sides
- Be gentle when mixing the pasta and fruit to avoid crushing or bruising the fruit
- Use a rubber spatula to fold the ingredients together
- Refrigerate the salad for at least 30 minutes to allow the flavors to meld and the dressing to set
Adjust the Seasoning
Once you have mixed everything together, it's time to taste the salad and adjust the seasoning if necessary. Depending on the sweetness of the fruit and the tanginess of the dressing, you may need to add a little more sugar or lemon juice to balance the flavors. You can also add salt and pepper, chopped herbs like mint or basil, or a sprinkle of cinnamon, nutmeg or ginger, depending on your taste preferences.Tips:
- Taste the salad before serving to ensure it is well seasoned
- Add a little more sugar or lemon juice to balance the sweetness and acidity
- Add salt and pepper to enhance the flavors
- Add chopped herbs or spices to add a little extra depth of flavor
