Time 3h

Yield 18 patties, 8 serving(s)

Number Of Ingredients 14

3 russet potatoes, boiled, peeled and semi mashed
2 green chili peppers, seeded and split
1/2 teaspoon turmeric powder
2 tablespoons vegetable oil
2 teaspoons table salt, plus more according to taste
1/2 cup fresh coriander leaves, chopped
1 teaspoon garam masala
1/2 red onion, chopped
2 tablespoons coriander powder
1/2 teaspoon red chili powder
2 puff pastry sheets, thawed (I use store bought)
1 tablespoon lemon juice
1 egg
1 tablespoon tap water

Steps:

  • Pre-heat the oven at 375 degree.
  • Heat oil in a pan. Add turmeric powder, green chilies and onions along with the salt. Sauté until the onions are translucent. Do not brown them.
  • Add the potatoes along with coriander powder, red chili powder and the garam masala.
  • With regular stirring, cook the potatoes until the mixture starts coming together.
  • Now, add the lemon juice and coriander leaves. Stir to combine.
  • Remove from heat and let the mixture completely cool.
  • In a bowl, lightly beat the egg along with 1 Tbsp of water and keep aside.
  • Line a baking tray with aluminum foil or parchment paper. Coat this with cooking spray. Set aside.
  • Unfold the thawed pastry sheet on a lightly floured surface.
  • If there are ridges in the pastry sheet, gently flatten them with a rolling pin.
  • Cut the sheet into either four 5-inch-by-5-inch or six 4-inch-by-4-inch squares.
  • Place about 2 Tbsp of potato mixture in the center of each square. I use an ice-cream scoop to make sure that al the patties have equal amount of filling.
  • Brush all the four sides with the egg and water solution.
  • Take the opposite sides of the square and fold to create a triangle. Seal the ends tight with your fingers. Then crimp them with a fork.
  • Place the filled patties on the baking tray.
  • Brush the tops and sides of these patties with the egg and water solution.
  • With a knife, create a small slit on top of each pastry. This will help the steam to escape during the baking.
  • Bake the patties on the medium rack of a pre-heated oven until they are golden brown in color and cooked through.
  • Remove from the oven and serve hot with tomato ketchup.
  • Enjoy these savory patties with your loved ones!

Aarsis Ultimate Potato Patties

Potato patties or Aloo Tikki is a popular snack in India made from boiled potatoes, spices, and breadcrumbs. It is a versatile dish that can be enjoyed on its own, used as a filling in burgers, or served with chutney as an appetizer. Aarsis Ultimate Potato Patties recipe is a twist to traditional Aloo Tikki, where we incorporate unique flavors and textures to elevate the dish to a whole new level. Let's dive into the components that make this recipe so special.
Boiled Potatoes
The foundation of Aarsis Ultimate Potato Patties recipe is boiled potatoes. We use starchy potatoes like Idaho or Russet that yield a fluffy texture once boiled. Boiled potatoes provide stability to the patties and also adds creamy flavor to the dish.
Spices
Spices are an essential part of Indian cuisine, and we don't shy away from using them in Aarsis Ultimate Potato Patties recipe. We use a blend of ground cumin, coriander, amchur powder, and garam masala to enhance the flavor of the dish. The spices provide a smoky, robust flavor that pairs well with the potato.
Cheese
Who doesn't love cheese? We incorporate grated cheddar cheese into the mixture to give a cheesy flavor to the patties. The cheese also helps to bind the mixture and acts as a glue, keeping the patties together.
Green Chilies
We add diced green chilies for some heat and flavor to the patties. It provides a fresh, spicy kick to the dish and complements the cheese and spices.
Crushed Cornflakes
Incorporating crushed cornflakes into the mixture gives a crunch to the patties. It is a great alternative to breadcrumbs and adds texture to the dish. We also sprinkle a generous amount of the cornflakes on top of the patties before frying to give an extra crunch.
Cilantro
Cilantro or coriander leaves provide a fresh, herbaceous flavor to the patties. We chop the cilantro finely and mix it with the potato mixture. It adds color, freshness, and brightens up the dish.
Oil
We use vegetable or canola oil for frying the patties. It has a high smoke point, making it ideal for deep-frying. The oil should be hot enough to fry the patties, but not too hot that it burns them. We recommend using a deep frying thermometer to ensure the correct temperature. Aarsis Ultimate Potato Patties recipe is a crowd pleaser and is perfect for entertaining guests or as a quick snack for yourself. The patties are crispy on the outside and soft and creamy on the inside, packed with some serious flavor and texture. Making the perfect potato patties can be a daunting task, as it requires a lot of patience and practice. Aarsis Ultimate Potato Patties recipe stands out from the rest, providing flavorful and crispy patties. To help you make the best version of these patties, here are some valuable tips that you should consider when trying out this recipe.

Choose the Right Potatoes

The key to making delicious potato patties is choosing the right potatoes. For this recipe, it is recommended to use starchy potatoes like Russet Potatoes, which will give the patties a fluffy texture. Avoid using waxy potatoes like red or yellow potatoes, as they tend to be firmer and do not work well for frying.

Shred the Potatoes

The next step is shredding the potatoes. You can use a food processor or a manual grater to shred the potatoes. However, make sure to squeeze out any excess moisture from the grated potatoes to ensure that the patties do not become soggy.

Add the Right Seasonings

The seasonings used in this recipe play a crucial role in enhancing the flavor of the patties. Apart from salt and pepper, you can add your preferred herbs and spices like garlic powder or smoked paprika to add a smoky flavor to the patties. It is recommended to be creative with the seasonings, but do not go overboard as it could overpower the taste of the potatoes.

Mix the Ingredients Well

Once you have shredded and seasoned the potatoes, it's time to combine all the ingredients. Make sure to mix the ingredients well to ensure that the seasonings are evenly distributed throughout the potato mixture. Overmixing the ingredients can break down the potato starch, making the patties dense and crumbly.

Heat the Oil Properly

Before frying the potato patties, it is essential to heat the oil to the right temperature. Heating the oil too much can cause the patties to burn, while inadequate heating can result in soggy and oily patties. It is recommended to heat the oil to around 375°F to ensure that the patties cook evenly and become crispy.

Forming the Potato Patties

When forming the patties, make sure to use your hands to press the mixture firmly together to prevent the patties from falling apart. If you find it challenging to form the patties using your hands, you can use a ring mold to shape them for a more uniform look. Also, make sure that the patties are of the same thickness to ensure that they cook evenly.

Flipping the Patties

When flipping the patties, make sure not to turn them over too early. Wait until the patties are golden brown and have developed a crispy outer layer. Once you flip the patties, do not press them down with a spatula, as this can make them lose their shape and become dense.

Serve with Your Preferred Condiments

Finally, when serving the potato patties, add your preferred condiments like ketchup, mayonnaise or mustard to enhance the flavor of the patties. You can also add toppings like cheese, lettuce or tomatoes, depending on your taste preferences.

Conclusion

Making Aarsis Ultimate Potato Patties may seem challenging, but with the right ingredients and techniques, you can make the perfect patties that will amaze your guests. Remember to select the right potatoes, shred them properly, add the right seasoning, mix the ingredients well, heat the oil properly, form the patties, flip them correctly, and serve with your preferred condiments. With these valuable tips, you are guaranteed to make the best version of Aarsis Ultimate Potato Patties recipe.
