When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

2 lbs- grnd beef or turkey
1 - egg
1/4 cup- minced onion
1 clove- minced garlic
2-1/2 tsp- salt
1 cup- oatmeal finely chopped
1/4 cup- ketchup
1 tsp- mustard
GLAZE.....
1/2 cup -brown sugar
1/4 cup- ketchup
1-1/2 tsp- mustard
1 tbl- worcestershire

Steps:

  • mix loaf ingred. together press into bottom of the dcb, make a slight indintation in the center so glaze will not pour off the edges. cover and micro. on high 10 min. drain liquid from dcb, cover with glaze, micro uncovered for 10 min.

1 1/2 lb ground beef and/or ground sirloin
2 carrots
1 zucchini
1/2 apple, cored
1/4 c onion, chopped
1/4 c celery, chopped
1/2 c bread crumbs
1 egg
2 tsp worcestershire sauce
1 tsp garlic, crushed or minced
1 tsp parsley flakes
1 tsp basil, dried
1 tsp garam masala spice
1 1/2 c tomato sauce, divided
1/2 c cheddar/jack cheese

Steps:

  • 1. Preheat oven to 350 degrees. Place meat in a large bowl, set aside.
  • 2. Using a blender or food processor, finely chop the zucchini, carrot and apple. Add to meat.
  • 3. Also add to the meat the celery, onion, bread crumbs, egg, worcestershire sauce, garlic, parsley, basil, garam masala, and a 1/2 cup of the tomato sauce. Blend well....don't be afraid to get you hands in there and mix it up thoroughly.
  • 4. Transfer meat to a 9x12 casserole dish and form a large rectangle, leaving approximately 1-2 inches around all sides.
  • 5. Bake for 45 minutes. Remove from oven, and top with remaining sauce and cheese. Bake for 10 minutes more. Remove from oven and let sit for 10-15 minutes before serving. Tip: If too juicy, I like to remove the extra juices using a spoon or suction.

It is rare for me to come up with a recipe that is just too good not to write down. Usually, when I cook, I like to play around with the ingredients and so I rarely make something the same way twice. But this meatloaf was as close to perfect as I could imagine. I tried to be specific in my directions but there is no way to determine ahead of time how wet the mixture will be after adding the vegetables. How wet is too wet is hard to describe, but it is better to err on the side of moisture, I'd think.

¾ cup diced yellow onion
2 cloves garlic, minced
¾ cup diced green bell pepper
2 ½ pounds ground sirloin
1 cup seasoned bread crumbs

½ cup oats
⅓ cup ketchup
1 tablespoon white sugar
1 tablespoon honey

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x13-inch baking pan.
  • Melt butter in a saucepan over medium heat; saute onion and garlic until onion is translucent, 5 to 10 minutes. Add green bell pepper to onion mixture and saute until bell pepper is softened, about 3 more minutes.

1 lb ground lean pork
4 green onions
10 ounces frozen chopped spinach, thawed and drained (1 pkg or 300g)
3/4 cup fine dry breadcrumb
1/2 cup parmesan cheese
1/4 cup chili sauce (such as Heinz)
2 eggs, lightly beaten
1/4 cup finely chopped parsley (or 2tbsp dried)
2 teaspoons salt
1/2 teaspoon ground nutmeg
1/4 teaspoon black pepper
fresh parsley (to garnish)

Steps:

  • Fold a longish piece of aluminum foil in half lengthwise. Place on bottom and up the side of slow cooker.
  • In a large bowl, combine beef and pork, mixing well. Add remaining ingredients to meat mixture and mix well.
  • Form into a loft shape and place evenly into foil-lined slow cooker. Tuck ends of foiled under id.
  • Cover and cook on Low for 8-10 hours or on High for 4-6 hours, until juices run clear when meat loaf is pierced with a fork. Serve sprinkled with chopped fresh parsley.

I have tried a lot of meatloaf recipes attemtping to please EVERYONE in my picky family. I have finally succeeded. I think it is the sauteed onions that make the difference, adding another layer of flavor.

2 tablespoons butter
1 medium onion, chopped
1 1/2 lbs lean ground beef
1 egg, lightly beaten
1/2 teaspoon salt
1/2 teaspoon pepper

1/4 cup Dijon mustard
1/4 cup Worcestershire sauce
2 -5 drops Tabasco sauce
1/2 cup seasoned dry bread crumb

Steps:

  • In a medium saucepan, melt butter over medium heat, cook onion for 5 to 7 minutes until softened.

1/3 cup whole milk

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
