Sunny's Grilled Brewed Awakening Rib Roast with Sunny's 1-2-3 Horseradish Sauce image

4 cups brewed French roast coffee
1/2 cup kosher salt
One 3-bone standing rib roast, about 6 pounds
1/4 cup plain breadcrumbs
1/4 cup ground French roast coffee or espresso
1/4 cup dark brown sugar
2 tablespoons chopped fresh Italian parsley
1 1/2 teaspoons ground sage
1 1/2 teaspoons hot Hungarian paprika
1 1/2 teaspoons garlic powder
1 1/2 teaspoons kosher salt
1/2 teaspoon ground white pepper
Freshly ground black pepper
12 ounces coffee beer
Sunny's 1-2-3 Horseradish Sauce, recipe follows
1 cup sour cream
3 heaping tablespoons prepared horseradish
2 shakes Worcestershire sauce

Steps:

  • For the brine: In a large bowl, add the coffee, salt and 4 cups warm water and stir to dissolve the salt. Add the rib roast. (If the liquid does not cover the meat completely, either make sure to flip the roast halfway through brining, or transfer the brine to a large turkey bag, add the rib roast and then seal tightly so the roast is completely surrounded by the brine.) Brine, refrigerated, at least 8 hours and up to 12.
  • For the rub: In a small bowl, mix together the breadcrumbs, ground coffee, brown sugar, parsley, sage, paprika, garlic powder, salt, white pepper and a nice grind or two of black pepper.
  • Remove the roast from the brine and pat it as dry as possible with a paper towel (discard the brining liquid). Using your hands, coat the roast on all sides with the rub, gently massaging it into the flesh. Let rest on the counter to come to room temperature, about 2 hours.
  • For grilling and serving: Place a drip pan under the grates on a grill and pour in the beer. Heat the grill to medium high (300 to 400 degrees F).
  • Place the roast bone-side down directly on the grill over the drip pan on indirect heat. Close the grill and cook until medium rare (120 degrees F), about 1 hour and 40 minutes. Remove from the grill and cover with aluminum foil to rest for a real 20 minutes.
  • Slice between the ribs and serve, or cut the meat off the ribs in a chunk and slice from there. Serve with Sunny's 1-2-3 Horseradish Sauce.
  • In a small bowl, mix the sour cream, horseradish and Worcestershire. Refrigerate until ready to serve.

4 1/2 - lb boneless rib roast
2 teaspoon(s) garlic powder
2 tablespoon(s) olive oil
1 teaspoon(s) ground black pepper
1 ounce(s) butter
1/4 teaspoon(s) paprika
1 teaspoon(s) salt
1 teaspoon(s) onion powder
1/2 teaspoon(s) baking soda
2 - diced shallots
3/4 cup(s) red wine

Steps:

  • Drain and wash beef and trim excess fat or muscle edge. Keep the top layer of fat.
  • Mix together the seasoning: garlic powder, olive oil, black pepper, butter, pepper, salt, onion powder, baking soda, red wine.
  • Tie together the beef and marinate sauce and refrigerate 2-3 days so beef will be tender and fully seasoned
  • In a pan add olive oil, brown both sides of the beef roast. About two minutes on each side.
  • Preheat oven to 325 ° F. Cook roast for 1 hour .
  • After 1 hour, lower the temperature to 250 ℃. Cook beef roast 1/2 hours. Then take a meat thermometer and insert it into the deepest part of the meat. If the thermometer says 125 degrees then the roast is cooked.

½ teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, and season with salt, garlic powder, and pepper. Add more or less seasonings to taste.
  • Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.

1 boneless beef chuck roast (4 pounds), trimmed
1 large sweet onion, chopped
1-1/3 cups plus 3 tablespoons water, divided
1 can (10-1/2 ounces) condensed French onion soup
1 cup packed brown sugar
1/3 cup reduced-sodium soy sauce
1/4 cup cider vinegar
6 garlic cloves, minced
1 teaspoon ground ginger
1/4 teaspoon pepper
3 tablespoons cornstarch

Steps:

  • Cut roast in half. Transfer to a 5-qt. slow cooker; add onion and 1-1/3 cups water. In a small bowl, combine the soup, brown sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over top. Cover and cook on low until meat is tender, 7-8 hours., Remove meat to a serving platter and keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. 4 -5 lbs roast beef, any cut
3 cups beef broth
2 (1 1/4 ounce) packages dry onion soup mix
1 (355 ml) can Pepsi

Steps:

  • Mix the broth, soup mix and the Pepsi in the crock pot and stir to mix.
  • Add the roast and cook on low for @ 5-7 hours.
  • Turn occasionally.
  • This is the basic recipe.
  • I usually add crushed garlic and chopped onions.
  • If you leave the roast for 7 hours, you will get a "pulled beef", just shred it with a fork, awesome on buns.
  • You can also remove the roast after @3 hours and slice the roast and then return the slices to the crock pot for @3 more hours, roast beef fit for company!
