Fastest ever lemon pudding image

Being short of time needn't stop you making your own pudding. This microwave-friendly sponge is ready in 10 minutes and can easily be a chocolate pud too

100g caster sugar
100g softened butter
100g self-raising flour
2 eggs
zest of 1 lemon
1 tsp vanilla essence
4 tbsp lemon curd
crème fraîche or ice cream, to serve

Steps:

  • Mix the sugar, butter, flour, eggs, lemon zest and vanilla together until creamy, then spoon into a medium microwave-proof baking dish. Microwave on High for 3 mins, turning halfway through cooking, until risen and set all the way through. Leave to stand for 1 min.
  • Meanwhile, heat the lemon curd for 30 secs in the microwave and stir until smooth. Pour all over the top of the pudding and serve with a dollop of crème fraîche or scoops of ice cream.

I have no idea where I found this recipe but of all the sponge pudding recipes I have tried this is the easiest, nicest and most versatile. I don't use any other.

100 g self raising flour
100 g unsalted butter
100 g sugar
30 ml milk
2 eggs (beaten)
vanilla essence (optional)
lemon zest (optional)
3 tablespoons golden syrup (or jam, maple syrup etc)

Steps:

  • Cream the butter and sugar together.
  • Add the eggs and vanilla essence.
  • Add the flour, milk and lemon zest.
  • Put the golden syrup in the bottom of a two pint bowl.
  • Spoon the mixture on top.
  • Cover and place in the microwave.
  • Cook on high for 3.5 minutes. Sometimes, the pudding needs another 1.5 minutes on top of this.
  • Variations: Any flavourings can be omitted or added. For example, add raisins (leaving our the syrup) and you have spotted dick!

A very simple microwave sponge pudding in less than 15 minutes with a texture between a sponge and a steamed pudding. I often add 2 tablespoons of jam or syrup to the bottom of the final bowl. Serve hot with custard.

¼ cup butter
¼ cup white sugar
½ cup self-rising flour
1 egg, beaten
2 tablespoons milk

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Mix in the egg and milk gradually, so as not to curdle the butter. Sift in the flour, and fold in gently. Transfer to a 1 pint microwave-safe bowl.
  • Cover, and cook for 3 1/2 minutes on full powder, or until the pudding appears set when gently jiggled, and the top is sticky. Serve hot.

410 g sliced peaches in juice, drained
1/4 teaspoon ground cinnamon
1/2 orange, rind of, finely grated
425 g rice pudding or 425 g custard
4 tablespoons caster sugar (for a more toffee flavour use demerara sugar)

Steps:

  • turn on the grill.
  • roughly chop the peahces.
  • put in four ramekins or heatproof cups.
  • stir the cinnamon and orange rind into the rice pudding.
  • spoon over the peaches.
  • smooth the tops with the back of a spoon and sprinkle evenly with sugar.
  • grill for 5 minutes until the sugar has caramelised.
  • cool a litle before serving eating as the sugar will be very hot.
  • VARIATIONS:.
  • instead of peaches, you can also use canned mandarin slices or pineapple rings or even fresh mango.
