- In a large saucepan, melt butter with oil over medium heat. Add onions, cook and stir until tender, 5-7 minutes. Stir in tomatoes, zucchini, garlic, oregano, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, until zucchini is tender and sauce reaches desired consistency, 50-60 minutes. Serve with pasta.

PAN-FRIED ZUCCHINI WITH ANCHOVY VINAIGRETTE

- Heat a large skillet over medium-high heat. Add half of the olive oil and heat until it shimmers. Add half of the zucchini slices so they lay in one single layer. Cook until deep golden brown, about 4 minutes. Sprinkle with 1/4 teaspoon salt. Flip each slice and cook an additional 4 minutes to brown the other side. Remove to a paper towel-lined plate and continue with the remaining oil, zucchini and salt. Place drained zucchini on a platter and sprinkle with the Parmesan.
- When all the zucchini has been removed, turn off the heat and pour off all but 1 tablespoon of oil from the skillet. Add the anchovy paste and break apart with a wooden spoon until it dissolves and smells toasted. Add the capers, oregano, red pepper flakes and tomato. Squeeze in the lemon juice and stir. Spoon the tomato mixture over the zucchini and sprinkle with the chopped parsley.

- Cook the pasta in salted water until al dente.
- Peel and halve the onion and cut into strips. Sweat in some oil, stirring occasionally, for about 5 minutes until light golden brown. Rinse the anchovies, pat dry and also cut into strips. Rinse, trim and coarsely grate the zucchini. Mix everything into the onions and cook for 1-2 minutes. Finally, add the lemon zest along with the parsley and drained pasta (and a little cooking water, as needed) and season with salt and pepper.
- Transfer to deep dishes and serve immediately.

- Heat oil in heavy large pot over medium-high heat. Add zucchini, onion and garlic and saut until zucchini is crisp-tender, about 5 minutes. Add tomatoes with juices and simmer until almost all liquid evaporates, about 8 minutes.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain; return to pot.
- Add pesto to pasta and toss to coat. Add zucchini mixture and toss over low heat to combine. Mix in basil. Season pasta with salt and pepper. Transfer pasta to large bowl. Serve, passing Parmesan cheese separately.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Meanwhile, stir together the anchovies and their oil with the red pepper flakes and garlic in a large skillet over medium heat, breaking up the anchovies as you stir. Once the garlic begins to sizzle, add the sliced zucchini, and cook until it begins to soften, about 3 minutes. Stir in the grape tomatoes, and continue cooking until the zucchini is tender, and the skins of the tomatoes begin to pop, 5 minutes more.
- Sprinkle the vegetable mixture with oregano and basil, then stir in shrimp. Cook until the shrimp turn pink and are no longer translucent. Pour over bucatini to serve.

- Scrub but do not peel potatoes. Put in pot with water to cover; cover and cook until done, about 20 minutes.
- Mince garlic.
- Scrub, trim and slice zucchini in food processor. Wash, trim and slice tomatoes in food processor.
- Heat oil in nonstick medium-large skillet and saute garlic, zucchini and tomatoes over medium-high heat.
- Wash and dry anchovies and mince. Add to vegetables. Cook about 10 minutes.
- Drain potatoes and cut into large pieces. Add to vegetables, stirring to coat well. Season with pepper.
