4 medium-large zucchini, trimmed, halved lengthwise
4 medium-large yellow crookneck squash, trimmed, halved lengthwise
5 tablespoons olive oil
1/2 cup chopped fresh basil
1/3 cup freshly grated Parmesan cheese (about 1 ounce)
2 tablespoons balsamic vinegar

Steps:

  • Prepare barbecue (medium heat). Place zucchini and crookneck squash on large baking sheet; brush all over with 3 tablespoons oil. Sprinkle with salt and pepper. Grill vegetables until tender and brown, turning occasionally, about 10 minutes. Transfer to plate and cool.
  • Cut vegetables diagonally into 1-inch-wide pieces. Place in large bowl. Add basil, Parmesan cheese, balsamic vinegar and remaining 2 tablespoons oil and toss to blend. Season to taste with salt and pepper and serve.

Number Of Ingredients 13

1 cup raw walnuts
1 cup coarse-grind bulgur
¼ tsp. kosher salt, plus more
2 lb. zucchini and/or yellow summer squash
¼ cup extra-virgin olive oil, plus more for drizzling
3 Tbsp. preserved lemon paste (such as NY Shuk)
2 tsp. honey
1 garlic clove, finely grated
Freshly ground black pepper
7 oz. Greek feta, crumbled
½ cup coarsely chopped parsley
½ cup torn mint leaves
Lemon wedges (for serving)

Steps:

  • Toast walnuts in a dry medium skillet over medium heat, tossing often, until golden brown, 8-10 minutes. Transfer to a cutting board and let cool. Coarsely chop.
  • Wipe out skillet and toast bulgur, stirring often, until a shade darker and starting to smell like popcorn, about 3 minutes. Add ¼ tsp. salt and 2 cups water and bring to a boil. Reduce heat to low and simmer gently until liquid is almost completely evaporated, 8-10 minutes. Cover skillet and remove from heat. Let sit while you prepare the rest of the salad.
  • Prepare a grill for high heat. (Or, heat a grill pan over high.) Trim ends of zucchini; slice lengthwise into long ¼"-thick planks. Set a wire rack inside a rimmed baking sheet and arrange zucchini in a single layer on rack (you can also do this in a large bowl if you don't have a wire rack). Drizzle with oil and season with salt. Toss zucchini, rubbing with your hands, to coat completely with oil.
  • Grill zucchini, undisturbed, until grill marks appear, about 2 minutes. Turn over and grill on other side until grill marks appear, about 2 minutes. Return to wire rack (or a colander set in a bowl) to drain; let cool slightly, Transfer to a cutting board and slice on a diagonal into 1" pieces.
  • Whisk preserved lemon paste, honey, garlic, and remaining ¼ cup oil in a large bowl to combine; season with pepper (lemon paste and feta should make it salty enough). Add bulgur and feta and toss to combine. Set some of zucchini, parsley, and mint aside for serving, then add remaining zucchini and herbs to salad; toss gently to combine. Taste and season with salt and pepper if needed.
  • Transfer salad to a platter. Top with reserved zucchini and herbs. Scatter walnuts over. Serve salad with lemon wedges for squeezing over.

  • Using the julienne blade of a mandoline, slice zucchini into long, thin strips. Transfer zucchini to a colander set over a mixing bowl. Toss zucchini with salt. Let stand 15 minutes at room temperature.

28 oz sea bass filets (4-7 oz each)
1 1/2 TBL olive oil
1/2 c olive oil
4 TBL water
3 TBL sherry vinegar
1/2 c zucchini, diced small
6 oz tomato, diced small
1 TBL shallot, diced fine
1 TBL fresh basil, shredded

Steps:

  • Preheat oven 425F. Peel and quarter potatoes and combine in cold water, bring to boil. Add salt and simmer 15 min or until soft. Reserve 3/4 c of potato cooking liquid and drain potatoes in colander. In bowl, coarsely mash potatoes. With electric mixer, beat potatoes with 2 TBl olive oil and reserved cooking liquid until smooth. keep warm. In shallow oiled baking dish, arrange sea bass filets, skin side down in single layer. Roast in middle of oven 7-10 min or until just flakes. Make dressing - in small saucepan, combine the remaining ingredients except basil, with salt to taste and bring to bare simmer. Heat dressing at bare simmer until zucchini is translucent. remove and stir in basil. Divide potato puree among 4 plates, top with sea bass skin side down, then spoon viniagrette on top

For zucchini dressing (base recipe):
1 medium zucchini, cut into 1-inch chunks (about 1 3/4 cups)
1 (3-inch) piece scallion, white and light green parts only, coarsely chopped
3 Tbsp. freshly squeezed lime juice
3 Tbsp. extra-virgin olive oil or cold-pressed flaxseed oil
1/2 tsp. fine sea salt, plus more to taste
For golden citrus zucchini dressing:
1 recipe Zucchini Dressing, using golden zucchini or a peeled green zucchini and 2 Tbsp. lime juice
1 (2-inch) piece fresh turmeric, peeled and chopped (finely chopped if using a regular blender)
2 Tbsp. freshly squeezed orange juice
2 Tbsp. raw cashew butter
2 tsp. nutritional yeast

Steps:

  • Base recipe:
  • Combine the zucchini, scallion, lime juice, oil, and salt in an upright blender (see Note) and blend until smooth, starting on a lower speed and gradually increasing it as the dressing comes together. Use a rubber spatula (with the blender off) to help move the ingredients around as necessary, or use the tamper stick if using a high-powered blender. Adjust the seasoning to taste-some variations with lots of extra herbs will need more salt. Scrape down the sides and blend again. Use immediately, or store in a glass jar in the fridge for up to 3 days. Shake well before using. The dressing will thicken once chilled; thin it out with a little water if needed.
  • Golden citrus zucchini dressing:
  • Make the dressing following the instructions for the base recipe, adding the turmeric, orange juice, cashew butter, nutritional yeast, and garlic to the blender along with the other ingredients.

  • Make the dressing: Put roasted red pepper, garlic, oil, mustard, vinegar, lemon juice, Maras pepper and cayenne in a blender and purée until smooth. Transfer to a small bowl and season with salt and pepper. Taste and adjust acidity with a few drops of lemon juice or vinegar.
  • Arrange zucchini and cherry tomatoes on a platter. Drizzle judiciously with dressing (reserve excess dressing for up to a week) and garnish with oregano, parsley and olives.

Pork Chops with Zucchini Dressing image

When my mom was in her 90s, I copied all her recipes and made a cookbook that I sent as a Christmas gift to my children, nieces and nephews. These tender pork chops were always one of my favorites. -Marguery Saxe, Wilbraham, Massachusetts

1 celery rib, chopped
1 small onion, chopped
2 tablespoons butter
3 cups chopped zucchini
3 cups cubed bread, toasted
1 egg white, lightly beaten
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 teaspoon poultry seasoning
6 bone-in pork loin chops (1/2 inch thick and about 2 pounds)
2 teaspoons chicken bouillon granules
2 tablespoons hot water

Steps:

  • In a skillet, saute celery and onion in butter until tender. In a bowl, combine the zucchini, bread cubes, egg white, parsley and poultry seasoning. Stir in celery mixture. Cover and refrigerate., Arrange pork chops in a greased 13-in. x 9-in. baking dish. Dissolve bouillon in hot water; drizzle over chops. Bake, uncovered, at 325° for 30 minutes. Top with zucchini dressing. Cover and bake 20 minutes longer or until meat juices run clear.

Grilled Zucchini with Buttermilk-Basil Dressing image

Serve this simple side dish of Grilled Zucchini with Buttermilk-Basil Dressing with flank steak or pasta for a filling and satisfying meal.

5 tablespoons buttermilk
6 tablespoons extra-virgin olive oil
2 teaspoons white-wine vinegar
1 garlic clove, minced
1 cup packed fresh basil leaves
1/3 cup coarsely grated Parmesan
Coarse salt and ground pepper
4 medium zucchini or yellow squash (or a combination), halved and cut lengthwise into 1/4-inch slices

Steps:

  • Heat a grill or grill pan over high. Clean and lightly oil hot grill. In a small measuring cup, combine buttermilk and 5 tablespoons extra-virgin olive oil with white-wine vinegar. In a food processor, combine garlic, basil, and Parmesan and process until basil is finely chopped. Season with salt and pepper. With machine running, add buttermilk mixture in a slow, steady stream and process until dressing is smooth. Season to taste with salt and pepper.
  • Toss zucchini with remaining tablespoon oil; season with salt and pepper. Grill zucchini (in batches if necessary) until lightly charred and tender, 4 to 6 minutes, flipping once. Transfer to a serving plate and drizzle with dressing.

ZUCCHINI SALAD WITH AJO BLANCO DRESSING & SPICED NUTS



Zucchini Salad With Ajo Blanco Dressing & Spiced Nuts image

Over the last few years I have started to love zucchini, but I have to admit that by the end of the season, it's like, "Not another bloody zucchini!" That said, this is one of the joys of eating seasonally-anticipation and excitement at the start of the season, despair and overload at the end.

Yield Serves 2 as a large share, or 4 smaller servings

Number Of Ingredients 15

3 to 4 slices white bread, crusts removed
3/4 cup blanched almonds, roughly chopped
1 garlic clove, peeled
1 teaspoon sherry vinegar
1 cup extra-virgin olive oil
1/3 cup ice-cold water
3 medium zucchinis, cut into random pieces
1/2 ounce hazelnuts, chopped
1/2 ounce blanched almonds, chopped
1/2 ounce walnuts, chopped
Pinch of smoked paprika
1 small handful flat-leaf (Italian) parsley, washed and chopped
1 small handful mint, washed and chopped
Freshly ground black pepper
Salt to taste

Steps:

  • For the dressing, first soak the bread in water for 5 minutes. Drain the bread, then place in a blender with the almonds, garlic, vinegar, and 1/2 cup of the olive oil. Gradually add the cold water and blend on high for 30 seconds, or until a smooth purée forms. Add salt to taste, then set aside in a bowl until serving time.
  • Preheat the oven to 350°F
  • On the stove, heat a ridged grill pan or grill to high, until slightly smoky.
  • Coat the cut sides of the zucchini pieces with 1/3 cup of the olive oil. Place them on the ridged grill pan and cook them, turning now and then, until they are branded all over. Place on a baking tray and finish in the oven for another 3-5 minutes-you want to cook them through, but leave a bit of texture and crunch to the zucchini. Once cooked, set aside and keep warm.
  • Place the nuts and remaining olive oil in a small saucepan over medium heat and warm through until fragrant. Transfer the nuts to a bowl, then season with the paprika and salt to taste.
  • To assemble the dish, place the warm zucchini in a large mixing bowl, along with the herbs and nuts, and stir gently to combine. Season with salt to taste and freshly ground black pepper if needed.
  • Dollop most of the dressing around the bottom of your serving dish, then arrange the zucchini salad on top. If desired, drizzle some more dressing on top for that creamy, nutty flavor and texture.
