A great way to use up the abundant zucchini in your garden. I freeze grated zucchini in 2 cup portions for winter Puffs!

2 cups shredded zucchini
2 eggs
¼ cup finely chopped onion
1 clove garlic, minced
1 ½ cups buttermilk baking mix
salt and ground black pepper to taste
oil for frying

Steps:

  • In a large bowl, combine zucchini, eggs, onion, and garlic. Blend in baking mix, salt and pepper.
  • Heat 1/2 inch of oil in deep-fryer to 375 degrees F (190 degrees C).
  • Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy. Drain on paper towels. Sprinkle with salt before serving.

A "secret" recipe that my aunt gave my mother in 1983. My aunt was the kind of person who was a good cook but would hide her recipes from other women. Am guessing at how many puffs you might get from this. Mom says this is really good and popular with her lady friends.

vegetable oil, for frying
2 eggs
1/2 cup brown sugar
1/2 cup white sugar
2 tablespoons butter, melted
1/2 cup milk
2 tablespoons cooking sherry (optional)
1 teaspoon vanilla
1 1/2 teaspoons orange zest
1 cup zucchini, peeling on shredded drained
3 1/2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 cups powdered sugar
3 tablespoons orange juice, guessing so start with 1 tablespoon

Steps:

  • Put oil into large frying pan and heat to 370 degrees.
  • In large bowl, beat eggs well, add both sugars, cream together thoroughly, add melted butter, milk, sherry, vanilla, and zest.
  • Stir in zucchini into same bowl as above.
  • In a medium size bowl, stir together flour, baking powder, salt, cinnamon, and nutmeg.
  • Stir dry ingredients into wet ingredients.
  • Take about a teaspoon of dough, gently drop it into hot oil, and fry for about 1 minute per side. (Mom does about 18 at a time, but it depends upon the surface area of your frying pan.).
  • Drain on paper toweling.
  • Make a thin glaze by combining powdered sugar with a tablespoon of orange juice and keep adding orange juice until you think it is right.

1 1/2 lbs zucchini, shredded
1 1/2 teaspoons salt
2 teaspoons vegetable oil
1 small yellow onion, chopped
4 eggs, lightly beaten
1/2 cup ricotta cheese
3 ounces shredded cheddar cheese or 3 ounces mozzarella cheese
1/2 cup fine dry breadcrumb
2 tablespoons chopped parsley
1 tablespoon minced basil or 1 teaspoon dried basil, crumbled
1/4 teaspoon black pepper

Steps:

  • In a large colander, mix the zucchini with the salt and let stand for 20 minutes.
  • Press the zucchini with a wooden spoon to extract the liquid.
  • Heat the oil in a heavy 10-inch skillet over moderate heat.
  • Sauté the onion until soft, about 5 minutes.
  • Preheat the oven to 350°F.
  • In a large bowl, mix the eggs and ricotta.
  • Stir in the zucchini, onion, cheddar cheese, bread crumbs, parsley, basil, and pepper.
  • Pour into a lightly oiled, 1 1/2-quart souffle dish or casserole.
  • *At this point the mixture can be stored.
  • Refrigerate in the tightly covered casserole for up to 12 hours.
  • •Bake, uncovered, until the center is set, 45 to 55 minutes.
  • The mixture will rise slightly.
  • Serve immediately with buttered mixed vegetables and Yeast Corn Rolls.
  • Serves 4.

ZUCCHINI FRITTERS

One day I wanted to serve zucchini as a side dish-but I didn't have the time to slice and deep-fry it. So I came up with these fritters instead! They go especially well with barbecued ribs or pork chops and corn on the cob. I'm an avid recipe clipper. 1/2 cup 2% milk
1 large egg, lightly beaten
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 of 1-ounce package ranch-style dip mix
2 cups (8 ounces) shredded zucchini
Ranch dressing, optional

Steps:

  • In a deep cast-iron skillet or deep-fat fryer, heat oil to 375°. , Meanwhile, combine milk and egg in a bowl. Stir together dry ingredients and add to egg mixture; blend well. Fold in zucchini. Drop batter by rounded teaspoonfuls into hot oil. Fry until deep golden brown, turning once. Drain thoroughly on paper towels. If desired, serve with ranch dressing.

These elegant roses make a lovely, light springtime lunch when paired with a leafy salad dressed with an herbed vinaigrette.

1 sheet frozen puff pastry, thawed (about 8 ounces)
All-purpose flour, for rolling out dough
2 tablespoons extra-virgin olive oil
1/4 cup grated Parmesan
2 teaspoons fresh thyme leaves
2 teaspoons grated lemon zest
1 small summer squash (about 6 ounces), cut in half lengthwise and thinly sliced diagonally
1 small zucchini (about 6 ounces), cut in half lengthwise and thinly sliced diagonally
Nonstick cooking spray

Steps:

  • Preheat the oven to 400 degrees F. Roll the puff pastry out to a 12-inch square on a floured work surface. Brush lightly with the olive oil and sprinkle evenly with the cheese, thyme and lemon zest. Cut into 6 even strips.
  • Shingle alternating yellow and green slices of squash and zucchini along the length of each strip of dough making sure to leave half the dough strip uncovered and allowing the green and yellow skins to hang over one edge slightly. Fold the uncovered dough over the squash and pinch together at the two ends. Starting at one end, roll each strip into a spiral. Lightly press the rolled tarts into a muffin tin sprayed with cooking spray.
  • Bake until the crusts are browned and crisp on the bottom, the top is dry and crisp and the squash is tender and browned on the edges, about 40 minutes. Remove to a rack to cool slightly. Serve warm.

1 medium zucchini

  • Grate zucchini and onion.
  • Beat in eggs.
  • Sift together dry ingredients, add to zucchini mixture.
  • Heat oil for shallow-frying in large frying pan.
  • Drop in batter by large spoonfuls, fry until brown.

This is one way I like to eat zucchini. It's from the Better Homes & Gardens cook book. I often use half zucchini and half yellow crookneck squash and Ritz for the cracker crumbs.

1 lb zucchini (4 c) or 1 lb crookneck yellow squash, sliced 1/4 (4 c)
1/2 cup sour cream
1 beaten egg yolk
1 tablespoon flour
1/4 teaspoon onion salt
1/8 teaspoon pepper
3/4 cup shredded cheddar cheese
1 egg white
2 tablespoons seasoned dry bread crumbs
1 teaspoon butter, melted

Steps:

  • In medium saucepan, cook zucchini (or squash), covered, in a small amount of boiling water for 3-5 minutes or till tender. Drain well. Spread evenly in 8 x 1 1/2" round baking dish (or 8"square).
  • In a bowl combine sour cream, egg yolk, flour, onion salt, and pepper. Stir in cheese. In a bowl, beat egg white till stiff peaks form (tips stand straight). Fold beaten egg white into sour cream mixture. Spoon atop squash.
  • In a small bowl, combine bread crumbs and melted butter. Sprinkle over egg mixture. Bake in a 350 oven for 20-25 minutes or till golden. Makes 6 servings.
