BUTTERSCOTCH ZUCCHINI BARS

These bars are so good. If you don't have butterscotch chips you can substitute some other chips or make an oatmeal crumb topping. They are also good served warm with a scoop of ice cream.

3 eggs
2/3 cup vegetable oil
1 1/2 cups sugar
2 teaspoons vanilla
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
2 cups zucchini, shredded and packed
1 cup butterscotch chips
1/2 cup brown sugar

Steps:

  • Preheat oven to 350. Grease a 15x10x1 sheet pan.
  • Beat together eggs, sugar, oil and vanilla.
  • Beat in soda, salt and powder.
  • Mix in flour until well mixed.
  • Stir in zucchini.
  • Pour into pan.
  • Mix together brown sugar and butterscotch chips and sprinkle over batter in pan.
  • Bake for 30 minutes or until a toothpick poked in comes out clean.

These cookies are so soft and chewy with the perfect hint of spice!

1 cup butter (softened)
2 cups sugar
2 eggs
3 1/2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cloves
2 cups finely shredded zucchini
2 cups milk chocolate chips

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, cream together butter and sugar.
  • Add eggs, one at a time, and beat after each addition.
  • Add flour, baking soda, cinnamon, salt, nutmeg and cloves and mix until combined.
  • Fold in zucchini and chocolate chips.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until golden brown.

It always seems like if you plant even one zucchini plant, you have enough zucchini the neighbors. So, what to do with all of that zucchini? It always amazes me that zucchini can taste so good in baked goods.

1 cup(s) butter softened
2 cup(s) packed brown sugar
2 - eggs
2 tablespoon(s) pure vanilla extract
1 - orange rind grated
3 cup(s) finely grated zucchini (unpeeled)
4 cup(s) flour
1 1/2 teaspoon(s) baking soda
1 1/2 cup(s) butterscotch chips
3 cup(s) granola cereal

Steps:

  • In a large bowl, mix together the butter and sugar. Mix in the egg, vanilla, orange rind, and zucchini. Add in the flour and baking soda. Mix in the granola cereal. Then mix in the butterscotch chips. Grease a cookie sheet and put teaspoonfuls of the dough onto the sheet. Bake in a 350 degree oven for 12 to 15 minutes.
