1 9" butter pie dough (or check out this cream cheese pie dough or whole wheat pie dough)
3 large eggs
¼ cup (56 grams) heavy cream
1 teaspoon salt
3/4 teaspoon ground black pepper
1 tablespoon lemon juice
Zest of 1 lemon (about 2 teaspoons)
Pinch chili flakes (optional)
3 medium zucchini or summer squash (about 16 ounces), shredded, squeezed of excessive moisture
⅓ cup fresh herbs (see notes)
1/2 cup (56 grams) crumbled goat cheese

Steps:

  • Preheat oven to 425ºF.
  • Roll out the pie dough to an 11″ circle and line a 9" pie plate, crimp the edges as desired. Prick the bottom of the dough all over with a fork. Place the pie in the freezer for 10 minutes.
  • Once chilled, line the pie dough with a parchment round piece of paper and then add pie weights (or dry rice or beans or lentils), making sure to push pie weights to the edges.
  • Bake for 20 minutes, then remove from oven and carefully remove the parchment and pie weights. Return to oven and bake for an additional 7 minutes. Set aside until ready to use.
  • Turn heat down to 375ºF.
  • In a large bowl whisk together eggs, heavy cream, salt, pepper, lemon juice, zest and chili flakes. Fold in the squeezed zucchini, herbs and goat cheese.
  • Pour the filling into the parbaked crust and bake at 375ºF for 40-45 minutes, until the filling is set. If necessary, cover the edge of the crust with foil to prevent it from burning. Let cool for about 10 minutes before slicing.

2/3 cup Bisquick Heart Smart® mix
3/4 cup fat-free (skim) milk
2 eggs or 1/2 cup fat-free cholesterol-free egg product
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat oven to 400°F. Lightly grease bottom and side of pie plate, 9x1 1/4 inches.
  • Sprinkle zucchini, tomato, onion and cheese evenly in pie plate.
  • Stir together remaining ingredients with fork until blended. Pour evenly into pie plate.
  • Bake about 35 minutes or until knife inserted in center comes out clean. Cool at least 10 minutes.

½ teaspoon garlic powder
½ teaspoon seasoning salt
½ teaspoon dried oregano
¼ teaspoon salt

1 teaspoon dried parsley
¼ cup grated onion
4 eggs
⅓ cup vegetable oil
2 zucchini, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.

1 tube (8 ounces) refrigerated crescent rolls
2 teaspoons Dijon mustard
4 cups sliced zucchini
1 cup chopped onion
6 tablespoons butter, cubed
2 large eggs, lightly beaten
1 cup shredded part-skim mozzarella cheese
1 cup shredded Colby-Monterey Jack cheese
2 tablespoons dried parsley flakes
1/2 teaspoon salt

  • Separate crescent dough into 8 triangles and place in a greased 9-in. deep-dish pie plate with points toward the center. A quiche-like dish for a light lunch or brunch, also makes a great side dish. I developed this recipe after having an abundance of zucchini in my garden every summer and trying to find a delicious way to enjoy all of it! You can substitute 2 tablespoons butter for the bacon and drippings if you prefer to leave the bacon out of the recipe.

1 (9 inch) prepared deep-dish pie crust
4 slices bacon
2 zucchini, thinly sliced
1 cup chopped cremini mushrooms
1 onion, chopped
2 teaspoons minced garlic
2 teaspoons Italian seasoning
2 teaspoons chopped dill weed
1 teaspoon minced fresh parsley
½ teaspoon garlic salt
½ teaspoon ground black pepper
1 cup shredded mozzarella cheese, divided
2 eggs, lightly beaten
grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Press pie crust into a 9-inch deep dish pie plate. Cover the edges of the crust with aluminum foil.
  • Bake pie crust until lightly browned, about 12 minutes. Set pie crust aside to cool. Increase oven heat to 350 degrees F (175 degrees C).
  • Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain the bacon slices on paper towels, while retaining drippings in the skillet.

  • Bake in preheated oven until the top begins to brown, about 30 minutes.
