APPLE & SAUSAGE SHEET PAN DINNER
A quick, easy and delicious. Try it with squash, sweet potatoes, Brussel sprouts or tender veggies like beans, sweet peppers, zucchini or asparagus.

Steps:
- Preheat oven to 400°F (204°C).
- Cut sausages into even slices (easier if they're slightly frozen).
- Cut apples, potatoes, carrots, beets and onions into even sized cubes, about 1/2 inch. Transfer to large baking sheet.
- Cut your preferred tender veggies into even sized pieces and set aside.
- Mix oil, honey, vinegar and mustard and spread over sausage, apple and root veggies. Sprinkle with salt, pepper and rosemary.
- Roast sausage and root veggies for 15 minutes. Add tender veggies, toss and roast another 15-20 minutes until sausage is browned and veggies are as tender as you like.
- Serve immediately. Garnish with a sprinkling of fresh parsley or Parmesan cheese.

- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
- Reduce heat to medium. Add remaining 1 1/2 tablespoons of oil to skillet with the zucchini, onion, and bell pepper. Sprinkle with salt, oregano, basil, garlic powder, onion powder, and pepper. Stir. Let cook until the onion is translucent and peppers and zucchini are close to tender, about 5 to 10 minutes.
- Add sausage back to the skillet along with minced garlic. Stir. Cover so everything heats through for 1 to 2 minutes. Taste. Add extra salt if desired. Garnish with chopped fresh basil (optional).

Steps:
- Heat 2 tbs. oil in a frying pan, add the onion; cook over low heat 7-8 minute.
- Add apple and tomato; cook for 5 minute stirring.
- Remove apple, tomato and onion from pan and set aside.
- Sprinkle zucchini with salt; toss. Heat remaining oil in same pan and fry zucchini until tender.
- Reduce heat; add onions mixture back to the pan. Simmer for 5 minutes.
- Mix the parsley and garlic, then add to the zucchini and onion mixture in pan. Simmer for a few minutes, then add salt and pepper.
- Serve immediately.
