Chicken with mushroom scallion sauce image

I usually serve this dish with pasta, but you can also serve it with garlic mashed potatoes.

Number Of Ingredients 9

4 chicken breasts
8 oz mushrooms
4 scallions
1 c white wine
6 Tbsp butter
1 medium lemon
3 Tbsp white balsamic vinegar
1/4 c cooked bacon
breadcrumbs

Steps:

  • 1. Dredge chicken in breadcrumbs and fry in oil till lightly browned on both sides.
  • 2. Remove chicken from pan and finish cooking in oven at 400 degrees for about 15 minutes
  • 3. Fry scallions and mushrooms in 3 tablespoons of butter till tender. Fry bacon till done. Crumble after cooked
  • 4. Add white wine, white balsamic vinegar, zest and juice from lemon and stir in with mushrooms and scallions.
  • 5. Once juice has reduced remove chicken from oven and add back into the pan to cook for about 3 minutes with the juices.
