This Healthy Zucchini Tomato Bake recipe is an easy way to use up all your summer vegetables. Fresh, healthy and full of flavor- it's the perfect side dish!

1 cup zucchini (sliced)
1 cup yellow squash (sliced)
2 cups tomatoes (sliced)
2 tablespoons basil (fresh, chopped)
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 and spray a pie dish or 8x8 baking dish with oil
  • Slice the tomato and squash into 1/4 inch thick slices.
  • Layer the squash and tomato in a pattern, side by side until the pan is full
  • Whisk together chopped basil, olive oil, salt, pepper and Parmesan cheese. Pour it over vegetable mixture until covered.
  • Bake at 350 for 20-25 minutes until vegetables are slightly tender. If you like your vegetables cooked well, keep the dish in the oven for an extra 5-10 minutes.
  • Optional: Top with additional parmesan and optional hot pepper flakes

A recipe modified from Sally Wise from her cookbook "From My Kitchen to Yours". This slice can be served hot or cold and can be made gluten-free or not. You can leave out the bacon for a vegetarian dish

5 eggs
400 g zucchini, grated
1 onion, peeled and grated
180 g lean bacon, diced (check gluten-free if needed for diet)
1/2 cup sun-dried tomato, chopped
1 cup grated tasty cheese or 1 cup grated cheddar cheese
1/4 cup parmesan cheese, grated
1/3 cup basil leaves, measure firmly packed
2 tablespoons parsley, finely chopped
3/4 cup flour, use a purchased blended gluten-free flour or 3/4 cup all-purpose flour, if not following a gluten-free diet
1/2 cup light olive oil
1/2 teaspoon salt

Steps:

  • Preheat oven to 170°C Grease and line an 18cm x 28cm slice tin with baking paper.
  • Whisk the eggs lightly in a large bowl.
  • Add all remaining ingredients and mix well.
  • Pour the mixture into the prepared tin and bake for 30-35 minutes, or until the slice is set.
  • Remove the slice from the oven and allow to stand for 5-10 minutes.
  • Cut into squares to serve.

This is my husband's favorite way to eat up summer's 'never-ending' supply of zucchini and tomatoes. Goes great with grilled chicken or fish, or toss it with some cooked pasta. Grape or cherry tomatoes work well too.

2 zucchini cut in half lengthwise, then cut into 1/2-inch half moons
2 cups quartered ripe tomatoes
½ onion, minced
3 cloves garlic, minced
½ teaspoon crushed red pepper flakes
¼ cup olive oil
salt and pepper to taste
½ cup grated Parmesan cheese
1 tablespoon chopped fresh basil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Lightly grease a 9x13 inch baking dish.
  • Combine the zucchini, tomatoes, onion, garlic, and red pepper flakes in the prepared baking dish. Drizzle with the olive oil, season with salt and pepper, and mix well.
  • Place in preheated oven. Roast until vegetables are tender and slightly golden, about 18 minutes. Remove from oven; sprinkle with the Parmesan cheese and basil.

Baked Zucchini With Tomatoes image

3 small zucchini, about 3/4 pound
3 ripe plum tomatoes, about 1/2 pound
Salt and freshly ground pepper to taste
1 medium-size green pepper, cored, seeded and coarsely chopped
1 cup finely chopped onions
1 teaspoon minced garlic
1 tablespoon chopped fresh oregano, or 2 teaspoons dried
2 tablespoons grated Parmesan cheese
3 tablespoons olive oil

Steps:

  • Preheat the oven to 425 degrees.
  • Trim off the ends of the zucchini and core the tomatoes. Cut each into 10 slices. Arrange them with edges slightly overlapping, alternating the zucchini and tomatoes in a baking dish. Sprinkle with salt and pepper.
  • In a bowl, mix well the green pepper, onions, garlic, oregano and cheese.
  • Spread the mixture evenly over the zucchini and tomatoes, and sprinkle with oil.
  • Place in the oven and bake 20 to 25 minutes until the tops are lightly browned.

Sauteed Zucchini With Sun-Dried Tomatoes image

A great side dish to pair up with beef, chicken or fish. Love the flavors in this dish - simple but full of flavor. I did add a clove of garlic to the original recipe just because I thought it would really give it a great background flavor. Tried and posted for ZWT7.

4 tablespoons extra virgin olive oil
1 1/2 lbs zucchini (about 4 medium/6 small)
4 large sun-dried tomatoes
1 small onion, finely diced
1 garlic clove, minced
salt and pepper

Steps:

  • Wash the zucchini using a brush to gently scrub the zucchini and then pat dry with a kitchen towel. Cut off the stems and cut each zucchini in 3 or 4 pieces; then cut each piece lengthwise into 6 wedges. Set to the side.
  • Chop the dried tomatoes and set to the side.
  • In a large sauté pan, over medium heat, place 4 tablespoons of oil and the diced onion. Cook over a medium heat until the sliced onions are translucent, for about 4 minutes, stirring occasionally.
  • Add the minced garlic and sauté an additional 1 minute.
  • Add the dried tomato and sauté for additional 2 minutes.
  • Add the zucchini, salt and pepper to taste, then cover with a tight lid and simmer for additional 5 minutes or until tender but firm.
  • Using a slatted spoon transfer the zucchini into a large dish and serve while hot.
