Steps:
- In a large skillet over medium heat, brown the Italian sausage until the inside is no longer pink. Cut sausage into 1/4 inch slices, and continue cooking until browned.
- Stir in the zucchini, yellow squash, and onion; cook and stir for 2 minutes. Pour in the tomatoes, with liquid. Reduce heat, cover, and simmer for 10 to 15 minutes.

ZUCCHINI AND SAUSAGE MILANO
Always looking for new zucchini ideas and my kids like Italian sweet (mild) sausages. I add 1 box of cooked penne and split the portions into 2 aluminum containers and froze them. I will defrost it and reheat it in the oven. When it is warmed through, add cheese on top then until melted. This recipe as described makes 2 "dinners" for about 5. You can serve it all at once for about 10.

Steps:
- Fry the sausages in a large skillet until lightly browned. Remove the sausages and set aside, leaving about 2 tablespoons of the grease in the pan.
- Meanwhile, boil the pasta; drain; set aside.
- Fry the zucchini and onion in the pan grease until slightly tender. Add remaining ingredients, except the cheese. Cook over low heat for 20 minutes, covered, stirring a bit.
- Add the pasta to the sauce and vegetables and blend.
- Place the mixture in a large baking dish and put in the sausages; or divide the mixture into 2 baking dishes for 2 separate dinners with half the amount of sausages in each.
- If you want to freeze for future use, do so now; add the cheese when you reheat.
- If making to eat now, add the cheese to the top and bake in 350 degree F. oven until cheese melts.

- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add sliced sausage. Sautè, flipping sausage frequently, for 1 to 2 minutes or until sausage slices have some browning. Remove from pan and set aside.
- Reduce heat to medium. Add remaining 1 1/2 tablespoons of oil to skillet with the zucchini, onion, and bell pepper. Sprinkle with salt, oregano, basil, garlic powder, onion powder, and pepper. Stir. Let cook until the onion is translucent and peppers and zucchini are close to tender, about 5 to 10 minutes.
- Add sausage back to the skillet along with minced garlic. Stir. Cover so everything heats through for 1 to 2 minutes. Taste. Add extra salt if desired. Garnish with chopped fresh basil (optional).

- In a large skillet, cook sausage, onion and garlic over medium heat until meat is no longer pink; drain. Add the tomatoes, tomato paste, parsley, sugar, basil, oregano and pepper. Cover and simmer for 30 minutes, stirring occasionally. In another large skillet, cook the zucchini in butter until tender. In a bowl, combine the egg, ricotta cheese and 3/4 cup Parmesan cheese; set aside., Spread 1-1/2 cups meat sauce in an ungreased 13x9-in. baking dish. Layer with three noodles, half of the zucchini, half of the ricotta mixture, 2 cups of mozzarella cheese and 2 cups meat sauce. Layer with remaining noodles, zucchini and ricotta mixture. Top with 2 cups meat sauce., Bake, uncovered, at 350° for 45-55 minutes or until bubbly. Sprinkle with remaining mozzarella and Parmesan. Bake 5 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting. Serve with remaining meat sauce or save for another use.

- Add celery and cook for 10 minutes, stirring occasionally.
- Add all remaining ingredients and cook covered for 10 minutes more.
