  • Cut cumbers into thin rounds. Spread some cheese on sliced cucumbers. Cut ham into 1 1/2-inch wide strips. Wrap ham around cucumbers and cheese.

1/2 English cucumber (seedless)
salt & freshly ground black pepper
1 (6 ounce) package boursin spreadable cheese with garlic and herbs
3 -4 slices french ham or 3 -4 slices deli-sliced boiled ham

Steps:

  • Cut 16 1/2 inch-thick pieces of cucumber on a bit of an angle and add salt and pepper to taste.
  • Spread some Boursin cheese on the cucumber slices.
  • Cut the ham into 2-inch strips.
  • Wrap a strip of ham around each cucumber slice, covering the cheese.

A spicy, tangy, cold, yummy way to use all those cucumbers you grow! This is an old favorite that will cool you off while heating up your taste buds. Simple to make and it keeps for 3-4 days. I grow cucumbers and one plant can have 10-15 cucumbers a day ripen. This is a great variation of the traditional cucumber salad. Add tomatoes for a different variation. If you use fresh ginger be sure to grate it fine and increase amount to 1 1/2 teaspoons.

2 large seedless cucumbers, sliced thin
1 large sweet onion, halved and sliced thin
2 teaspoons salt
1 large jalapeno pepper, seeded and minced
¼ cup minced carrot
⅓ cup rice vinegar
1 teaspoon ground ginger
5 teaspoons white sugar
¼ teaspoon coarse black pepper

Steps:

  • Use a vegetable peeler to peel stripes in the cucumbers leaving half the skin. Halve the cucumbers lengthwise. Use spoon to remove the seeds from the cucumber halves. Slice the halves thinly.
  • Place the cucumber, onion, and 2 teaspoons salt in a bowl with enough water to cover; allow to marinate in refrigerator at least 30 minutes. Drain thoroughly in a colander and transfer to a large bowl; add the jalapeno pepper and carrot to the mixture.
  • Stir the rice vinegar, ginger, sugar, and pepper together in a small bowl until the sugar is completely dissolved; pour over the cucumber mixture and stir to evenly coat. Cover with plastic wrap and chill in refrigerator at least 30 minutes.

18 slices, 1/4-inch thick, English or seedless cucumber, about 1/2 a whole cucumber
2 or 3 pinches salt
6 ounces herb cheese (recommended: Boursin)
1/4 pound smoked Norwegian salmon
Black pepper

Steps:

  • Set cucumber slices on paper towels to drain and dry. Season lightly with salt. Spread each slice of cucumber with a little cheese. Arrange cucumbers on a serving plate. Top each snacker with a small piece of salmon. Crack a little black pepper over the snackers and serve or chill.

1/4 cup white wine vinegar
1 teaspoon sugar
1 large seedless cucumber
Sea salt
1/2 cup creme fraiche
Freshly ground white pepper

Steps:

  • Heat the vinegar, sugar and a splash of water in a small saucepan just long enough to dissolve the sugar. Transfer to a small serving bowl and let cool.
  • Peel the cucumber, then grate it on the large holes of a box grater or in a food processor using the shredding disk, or with a mandoline. Place the cucumber in a sieve and season with sea salt. Let drain for 20 to 30 minutes.
  • Press the liquid from the cucumber, and then add the cucumber to the bowl with the vinegar mixture. Stir in the creme fraiche and season with white pepper. Adjust the salt and pepper to taste.

6 hot pepperoncini or Italian hot peppers, chopped

1 tin flat anchovies, chopped
2 to 3 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil, eyeball it
Salt and pepper

  • Combine salad ingredients in a bowl and dress with vinegar, extra-virgin olive oil and season the salad with salt and pepper.

1/4 lb cooked deli ham, sliced 1/4 inch thick and finely diced
1 celery rib, finely chopped
2 tablespoons pimento-stuffed green olives, drained and finely chopped
2 tablespoons flat leaf parsley, chopped
2 tablespoons mayonnaise (just enough to bind the salad)
1 tablespoon prepared yellow mustard
1 large dill pickle, finely chopped
1/4 small red onion, finely chopped
1 English cucumber (seedless)
salt
fresh ground pepper

Steps:

  • In a bowl combine the ham, celery, olives, parsely, mayonnaise, mustard, pickle, red onion, and salt and pepper to taste. Reserve.
  • Cut the cucumber into 1 1/2 inch-thick disks. With a melon baller scoop out a little bit of the centre of each cucumber disk to create a cup.
  • Fill each cup with a heaping tablespoon of the ham salad.
  • Serve cold.
