Yield Serves 6

Number Of Ingredients 5

8 tablespoons (1 stick) butter, room temperature
2/3 cup chopped shallots (about 3 ounces)
2 tablespoons chopped fresh thyme or 2 teaspoons dried
6 to 9 ears fresh corn, shucked
Olive oil

Steps:

  • Melt 2 tablespoons butter in heavy small skillet over medium heat. Add shallots and sauté until brown, about 4 minutes. Cool. Combine remaining 6 tablespoons butter and thyme in small bowl. Add shallot mixture and blend well. Season to taste with salt and pepper. (Butter can be prepared 2 days ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • Prepare barbecue (medium-high heat). Brush corn with olive oil. Grill corn away from direct heat until just cooked and beginning to brown in a few places, turning frequently, about 10 minutes. Alternatively, omit brushing corn with olive oil and cook in large pot of boiling salted water until tender, about 6 minutes, drain. Serve corn with shallot-thyme butter.

ZIPPY CORN CHOWDER

Zippy Corn Chowder image

I went to Applebee's one day craving soup. They had this corn chowder that was out of this world. I tried many recipes, then I came along to this one. I make this at least once every 2 months. I crave it! It's just spicy enough, without making your nose run. I love it!

JUST-RIGHT-EVERYTIME CORN ON THE COB

Just-Right-Everytime Corn on the Cob image

This recipe is no-fail (assuming using fresh corn :) yummy corn on the cob. The key is to remove the corn promptly once the water has come to a boil ---- leaving the corn in the pot even if you have turned off the heat will guarantee that your corn will be tough.

Time 25m

Yield 1 ear of corn per person

Number Of Ingredients 4

corn on the cob
water, 1 big pot
1 pinch sugar
butter

Steps:

  • Shuck the corn. DO NOT shuck until JUST before you are ready to put it in the pot.
  • Fill a pot with cold water. Use a big enough pot so the ears of corn are not crammed into it. Sprinkle a pinch of sugar in the water to heighten the sweetness of the corn.
  • Bring the water to a boil. When the water comes to a rapid boil, the corn is done. Depending on how big a pot you use, this can take anywhere from 5 to 15 minutes.
  • Remove the corn immediately. Ideally, you will serve it right then. If not, put in a bowl or on a plate and cover loosely with foil. Anything is better than leaving it in the pot of boiling water : ).
  • Spread with butter and enjoy!
