4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette, recipe follows
Salt and freshly ground black pepper
1/2 cup red wine vinegar
1/4 cup fresh lemon juice
2 teaspoons honey
2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil

Steps:

  • Pour the broth into a heavy large saucepan. Cover the pan and bring the broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely.
  • Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
  • Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.
  • Yield: 1 3/4 cups

6 cups cooked orzo pasta (2 cups uncooked)
4 garlic cloves
1 teaspoon salt
1 teaspoon ground pepper
1 tablespoon Dijon mustard
6 tablespoons balsamic vinegar
1 cup olive oil
2 cups sun-dried tomatoes packed in oil, drained and chopped
2 cups kalamata olives or 2 cups oil-cured olives, pitted and halved
1 bunch fresh parsley, finely chopped
1/4-1/2 cup fresh grated parmesan cheese

Steps:

  • In a large saucepan, cook pasta in boiling water until just tender, about 8 minutes.
  • Drain.
  • Place garlic, salt, pepper, mustard and vinegar into a food processor.
  • Process well.
  • Add oil, process briefly until well blended.
  • Pour over orzo while pasta is still warm.
  • Add tomatoes to pasta along with olives and chopped parsley.
  • Sprinkle with Parmesan cheese.
  • Toss again and adjust seasonings, if necessary.
  • Serve immediately, or refrigerate for later use (can be made earlier in the day).
  • Best served at room temperature.

1 garlic clove, peeled
1/2 red onion, chopped
1 medium zucchini, chopped
2 fresh tomatoes, chopped
6 ounces crumbled feta cheese
2/3 cup balsamic vinaigrette
2 cups baby arugula
1 1/2 cups orzo pasta, uncooked

Steps:

  • Cook pasta according to package directions; drain. Heat oil in medium skillet over medium heat. Add onion, garlic and zucchini, cook stirring 2 minutes. Add tomatoes and arugula; cook 2 minutes more.
  • In large bowl, combine orzo, vegetable mixture and feta. Pour balsamic vinaigrette over pasta and toss gently.

1 cup walnut halves
1 cucumber
1 red bell pepper
1 yellow bell pepper
kosher salt
1 1/2 cups dry orzo pasta
2 tablespoons extra virgin olive oil
1/2 cup kalamata olive, pitted and halved
1/2 cup diced scallion
1/4 cup chopped fresh basil
1/4 cup chopped fresh Italian parsley
1 1/4 cups crumbled feta cheese
salt & freshly ground black pepper, to taste
1/3 cup lemon vinaigrette
1 tablespoon Dijon mustard
2 teaspoons red wine vinegar
1/3 cup fresh lemon juice
1 teaspoon honey
1 tablespoon lemon zest, freshly grated
1 garlic clove, finely chopped
1 teaspoon kosher salt
1/4 teaspoon white pepper
3/4 cup extra virgin olive oil

Steps:

  • SALAD.
  • Preheat the oven to 350 degrees.
  • Spread the walnuts on a rimmed baking sheet and toast on the center rack of the oven for about 10 minutes, or until golden brown.
  • Let cool, then coarsely chop and set aside.
  • Peel and core the cucumber and cut it into 1/2-inch cubes.
  • Core the red and yellow peppers and cut them into 1/2-inch-square pieces.
  • Set aside.
  • Fill a large saucepan two-thirds full of water.
  • Add a pinch of salt and bring to a boil.
  • Drop in the pasta and simmer for 3 to 5 minutes, or until tender.
  • Remove the pan from the heat and drain the pasta in a colander, then cool the pasta by running cold tap water over the colander for a few minutes.
  • Shake the colander to remove excess water and transfer the cooled pasta to a medium bowl.
  • Toss with the olive oil to keep the pasta from sticking together.
  • Add the toasted walnuts, cucumbers, peppers, olives, scallions, basil, parsley and feta.
  • Drizzle in the Lemon Vinaigrette and toss well.
  • Season to taste with salt and pepper.
  • Cover and store in the refrigerator for up to 2 days.
  • LEMON VINAIGRETTE yield: 1 1/4 cups.
  • Combine all the ingredients except the olive oil in a medium bowl.
  • Mix well with a whisk.
  • Add the oil in a slow stream, whisking as you pour.
  • Continue whisking until the dressing has emulsified, then cover and store in the refrigerator for up to 4 days.

8 ounces orzo pasta, cooked and rinsed with cold water
1 medium cucumber, peeled and diced small
1 medium zucchini, diced small
5 radishes, diced small
1 small red onion, diced small
1 large ear of corn, sliced off the cob (use canned if fresh not available)
1 roma tomato, diced small
1/2 red bell pepper, diced small
1 cup small tomatoes, quartered (depending on size)
1 lb mozzarella cheese, balls (Perlini)
fresh basil, chopped
fresh parsley, chopped
fresh chives, chopped
1/2 cup white balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
1 cup extra virgin olive oil
salt and pepper

Steps:

  • Chop all veggies very small, and toss with cooked orzo.
  • Add cheese, and toss again.
  • Mix all dressing ingredients and shake hard in a container to emulsify.
  • Dress salad with as much dressing as you'd like. You won't necessarily use it all.
  • Chill and serve cold.
