This is not your ordinary meatloaf. Horseradish in both the meat mixture and the saucy topping creates a really nice flavor throught this meatloaf. From America's Best Recipes, submitted by Maxine Johnston Scholtz.

2 lbs ground beef
3/4 cup regular oats, uncooked
1 large onion, chopped
1/2 cup catsup
1/4 cup milk
2 large eggs, lightly beaten
1 tablespoon prepared horseradish
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 cup catsup
3 tablespoons brown sugar
1 tablespoon prepared horseradish
2 teaspoons spicy brown mustard

Steps:

  • Combine the meatloaf ingredients in a large bowl, mixing well. Form mixture into a loaf, and place in a 9x5x3 inch loafpan.
  • Combine sauce ingredients in a small bowl, stirring well. Spoon half the sauce mixture over the top of the meatloaf. Bake uncovered, at 375 degrees for 45 minutes.
  • Spoon the remaining sauce mix over the meatloaf, and bake for an additional 10 minutes. Remove to a serving platter.

Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

Number Of Ingredients 12

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

MOM'S MEATLOAF

1 teaspoon prepared horseradish
1 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef, moistened
1/2 onion, finely chopped
1 egg
2 teaspoons Worcestershire sauce
1 cup bread crumbs
1 cup ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together the horseradish, mustard, salt, and pepper. Set aside.
  • In large bowl, mix ground beef, onion, egg, and Worcestershire sauce. Add contents of small bowl and mix thoroughly. Add the bread crumbs and combine well.
  • Place mixture into a 1-pound loaf pan. Pour ketchup over top and place in oven.
  • Bake uncovered for 45 to 60 minutes.

ZESTY MEATLOAF

This hearty meatloaf needs no sauce and makes great sandwiches the next day... IF you have any leftovers!

1 lb ground beef
1 lb bulk pork sausage
1 tablespoon Worcestershire sauce
1/3 cup mustard, any type except whole grain*
1/4 cup Heinz 57 steak sauce, sauce**
1/2 cup dry breadcrumbs
2 tablespoons instant minced onion
2 teaspoons montreal type steak seasoning

Steps:

  • Preheat oven to 350°F.
  • Spray a pan & rack liberally with non-stick cooking spray.
  • Combine all ingredients just until blended. Shape into a loaf and place in prepared pan.
  • Bake in middle of oven for 90 minutes.
  • Remove and allow to stand 10 minutes before slicing.
  • Refrigerate leftovers.
  • *I prefer spicy brown mustard.
  • ** If you use ketchup, use original amount listed in recipe. If you use A-1 Sauce instead, reduce the amount of Worcestershire sauce to 2 teaspoons.

Some people may not like the taste of horseradish but I love it. As long as its not too much of course lol. I experimented for awhile trying to find a great meatloaf and this is one I came up with a few years back and it is my favortie meatloaf ever, not dry at all and lots of sauce on top. Very yummy I promise.

TOPPING SAUCE
1/2 c chili sauce
3 Tbsp brown sugar
1 Tbsp prepared horseradish
2 tsp spicy brown mustard

Steps:

  • 1. Combine first 9 ingredients in a large mixing bowl; stir well. Form beef mixture into a loaf and place in a 9x5-inch loaf pan.
  • 2. Combine 1/2 cup chili sauce, brown sugar, 1 tbsp horseradish and mustard in a small bowl, stirring well.
  • 3. Spoon half of sauce mixture over top of meatloaf. Bake, uncovered, at 375 degrees for 1 hour and 15 minutes.
  • 4. Remove from oven and and spoon remaining sauce mixture over meatloaf and bake 10 more minutes. Remove to a serving platter.
