- Stuffing:.
- Add all ingredients to mixer and mix well.
- Pork Tenderloin:.
- Butterfly tenderloin and pound out until flat.
- Place stuffing down middle of the tenderloin.
- Place roasted pablono over stuffing.
- Roll tenderloin and secure with butcher twine.
- Brown all four sides of tenderloin.
- Place in oven at 350 degrees for 8-10 minutes or until internal temperature is 160 degrees.
- Allow to cool slightly, remove strings, cut into medallions.
- Roasted Garlic Cream Sauce:.
- Using a sauce pan reduce cream by almost half on medium heat.
- Add chorizo and roasted garlic to thicken slightly for approximately 7-8 minutes, stirring occasionally.
- Mix until smooth.

- Make a lengthwise slit about three-fourths of the way through tenderloin; open tenderloin so it lies flat. Flatten to 1/4-in. thickness; set aside. , In a small skillet, saute onion in butter until tender. Add bread crumbs; saute until crumbs are golden brown. Remove from the heat. Stir in the parsley, sage, rosemary, salt, pepper and enough egg to moisten the ingredients. , Spread stuffing on one long side of tenderloin to within 1/4 in. of edges. Close meat and place bacon on top; tie with kitchen string. Place on a rack in a shallow roasting pan. , Bake, uncovered, at 350° for 50-60 minutes or until a thermometer reads 160°. - Preheat oven to 425°. In a small skillet, saute celery and onion in butter until tender. In a large bowl, combine the bread cubes, celery mixture, salt and pepper; set aside., Cut a lengthwise slit down the center of each tenderloin to within 1/2 in. of bottom. Open tenderloins so they lie flat; cover with plastic wrap. Flatten to 1/2-in. thickness. In a large skillet, brown pork in oil on all sides over medium-high heat., Spoon stuffing onto one tenderloin. Top with the second tenderloin; tie with kitchen string. STUFFED PORK TENDERLOIN
Sometimes when you're barbecuing, you want to get a little fancy-maybe to impress the neighbors or something like that. Hell, I've been there, believe me. And I can tell you from experience that stuffed tenderloin will get you that "wow" factor.

- Heat a smoker to 300°F.
- Trim any excess fat and membrane from the pork tenderloin. Using a sharp knife with a very long, straight blade, insert the knife through the center of the tenderloin. Take care not to cut out to the sides-just insert the knife blade into the center and then remove it. Push a turkey baster through the cut, enlarging the opening; remove the baster.
- Trim your smoked sausage link to the exact length of the tenderloin. Stuff it into the opening. Apply the rub thoroughly, coating the outside of the tenderloin. Place the tenderloin in a medium-size aluminum pan, and place the pan in the smoker. Cook for about 1 hour or until the internal temperature of the meat reaches 150°F.
- While the meat is cooking, prepare the sauce: In a medium saucepan over medium heat, combine the vinegar sauce and the apple jelly. Stir thoroughly to combine. Make sure the sauce thins out as it heats, about 5 minutes. Then lower the heat and keep it warm until you're ready to use it.
- During the last 15 minutes of cooking time, apply half of the sauce to the meat and put the meat back in the smoker. Reserve the remaining sauce.
- Remove the pan from the smoker. Allow the meat to sit, loosely covered, for 10 minutes. Then cut it into slices about 1/4 to 1/2 inch thick, and serve with the remaining sauce.

I came up with this spinach and mushroom stuffed pork tenderloin one day when looking for something new to do with pork tenderloin. This dish is very easy to make and assemble and is so pretty to serve to family and guests. I like to serve this with a nice salad and roasted potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat 1 teaspoon olive oil in a skillet over medium heat; cook and stir mushrooms, shallot, thyme, garlic powder, sage, black pepper, and salt in the hot oil until liquid has evaporated and mushrooms and shallots are softened, 5 to 10 minutes. Add parsley; cook and stir for 1 minute. Mix in spinach; cook and stir until spinach is wilted, about 5 minutes. Stir in mustard. Remove from heat.
- Place pork tenderloin on a work surface; lay prosciutto atop tenderloin. Spread mushroom-spinach mixture over prosciutto, leaving 1/2-inch border on all sides. Tightly roll tenderloin around the filling and tie together with kitchen string to keep closed.
- Heat 2 tablespoons olive oil in a large skillet over medium heat; place rolled tenderloin in the hot oil. Sear until all sides are golden brown, about 10 minutes. Transfer seared tenderloin to a 9x13-inch casserole dish.
- Bake in the preheated oven until pork is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
