From "About.Com". Great for those who can't find American A-1 sauce. Did you know that Canadian A-1 is TOTALLY different from the American version even though the bottles look the same? I found this out while at a steak house in Toronto. The Canadian version is much sweeter and redder that the US version.

Number Of Ingredients 9

1/2 cup cold water
1/4 cup raisins
1/2 cup aged balsamic vinegar
1/4 cup Worcestershire sauce
1/4 cup ketchup
1/4 cup Dijon mustard (no substitutes!)
1 pinch cayenne pepper
1/4 teaspoon black pepper
1 garlic clove, cut in half but not crushed

Steps:

  • Put all ingredients into a small pan and bring to a low simmer.
  • Simmer over low heat for 15 minutes.
  • Strain into a bowl by pouring through a fine mesh strainer, pushing raisins with the back of a spoon to release all juices.
  • Allow to cool completely before seasoning to taste with salt and pepper. It tastes different when its hot.
  • Enjoy with your favorite steak!

Found this recipe on SBCanning.com... the doubled recipe makes 5 jars, 1/2 pint size...I used the immersion blender instead of straining...I gave it a name...now just say Z-1 with a male French accent...this is a canning recipe, or not

1 c catsup
1/2 c onion, coarsly chopped
1 clove (large) garlic
1/4 c water
1/4 c worcestershire sauce
1/4 c bottled lemon juice
1/4 c white vinegar
2 Tbsp soy sauce
2 Tbsp brown sugar
1 Tbsp prepared mustard (yellow)

Steps:

  • 1. Combine all ingredients in a saucepan and simmer uncovered for ~ 30 min or until it reaches a good consistency, stirring occasionally
  • 2. Strain to remove onion and garlic...I did not do this.....I used the immersion blender here and buzzed it up
  • 3. ladle into hot jars...1/2" headspace...15 min in BWB canner
  • 4. Or store it in the fridge?...enjoy
