A warming comfort food, this soup is served frequently at our house in the cooler months. Fabulous when served in bread bowls! Prep time considers cleaning and chopping fresh vegetables.

6 -8 medium red potatoes
2 cups water
1 small onion, chopped
1 cup mushroom, sliced
1/2 cup chopped celery
1/4 cup bacon or 1/4 cup bacon bits (optional)
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
2 cups cubed cooked ham
ground black pepper
crushed red pepper flakes

Steps:

  • Peel Potatoes and cut into 1 inch cubes.
  • Boil in water until done, about 15 minutes.
  • Drain & Set aside, but save 1 Cup of the cooking liquid for later.
  • Melt butter in a large saucepan over medium heat.
  • Add onion, celery, and mushrooms, stirring frequently until onion is soft and translucent.
  • Add flour, bacon, red and black pepper to saucepan.
  • Mix well, cook 3- 4 minutes.
  • Slowly add potatoes, reserved cup of liquid, milk, and sugar.
  • Stir well.
  • Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.

2 tablespoons butter
1 medium onion, chopped
1 cup chopped carrot
2 -3 minced garlic cloves
2 cups chopped broccoli florets, measure after chopping
1/4 cup chopped parsley
5 cups chicken broth, can use veggie broth
32 ounces frozen cubed hash brown potatoes, thawed
1/2 teaspoon paprika
1/2 teaspoon pepper
1/2 teaspoon celery salt
6 tablespoons butter
1/3 cup flour
3 cups milk
2 -3 cups shredded sharp cheddar cheese
salt, to taste
1 cup diced ham (optional)
6 slices bacon, cooked and crumbled (optional)

Steps:

  • In a large soup pot, melt butter. Add onions, carrots, garlic, broccoli and parsley; saute for about 5-7 minutes or until softened.
  • Add the broth, hash browns, paprika, pepper, and celery salt.
  • Bring to boil.
  • Reduce heat to low and simmer for about 20 minutes or until everything is soft.
  • In a separate saucepan, melt the 6 tbsp butter. Stir in the flour and stir constantly while cooking for 3 minutes. Stir this into the soup.
  • Add the milk and cheese to soup.
  • Cook and stir soup mixture until heated through and thickened. Add salt to taste.
  • Stir in optional ham or bacon; if using it.

0.5 cups onion
1 teaspoons pepper
4 cups chicken broth
1 units water
6 slices bacon
1 units rivlets
0.75 cups flour
0.5 teaspoons salt
1 units eggs
1 units mix

Steps:

  • Place potatoes in a deep pot. Add onion and pepper. Add stock and enough water to cover well. Bring to a boil. Reduce heat and simmer until potatoes are tender. Crumble fried bacon and stir into the soup.

This has to be the best potato soup ever. It comes from many messed up not so yummy mistakes and now it's awesome. I hope you enjoy it!!

5 lb Russett Potatos
1 large Onion(diced)
2 Tbsp Butter
1 c Carrots(diced)
1 c Celery(diced)
1 Tbsp Garlic Powder
2 c Grated Sharp Cheddar Cheese
1 c Heavy Cream
2 Tbsp Un-cooked Malt-o-meal
1 c Cooked Bacon Pieces

Steps:

  • 1. Peel and dice potatos in 1 inch peices. Rinse and put into a pot. Fill with cold water till potatos are just covered. Boil till the potatos have broken up into pieces. About an hour
  • 2. DON'T drain the water after the potatoes are done. Just set the pot on a back burner. In saute pan cook the onions, celery and carrots till almost tender in butter. In seperate pan cook up bacon and then break into pieces.
  • 3. Add the vegetables into the potatos and add cream. Add the garlic and cheese. Warm the soup back up till the cheese is melted. sprinkle the malt-o-meal in soup to thicken. Salt and pepper to taste.
  • 4. Dish up this yummy soup and top with a few bacon bits. If you really want a tasty treat try and spoon of sour cream and a little chives. Enjoy!!
