The first time I made this, I gave some to my daughter, who hates zucchini, and she said it was the best thing I ever made! It has been an excellent and wholesome way to use up all of the zucchini from my garden. If using thawed shredded zucchini, make sure to drain very well. -Tammy Kirsch, Arcade, New York

1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup quick-cooking oats
2 tablespoons butter, softened
1/2 teaspoon ground cinnamon
BATTER:
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
3/4 cup whole wheat flour
1-1/4 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup butter, softened
1 cup packed light brown sugar
1-1/2 teaspoons vanilla extract
2 large eggs
1/3 cup reduced-fat sour cream
2-1/2 cups shredded zucchini (about 2 medium)
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Coat a 10-in. fluted tube pan with cooking spray; dust lightly with flour, tapping out excess., Mix first five ingredients with a fork until crumbly. Sprinkle onto bottom of prepared pan., For batter, mix oats, flours, cinnamon, baking powder, baking soda, salt and nutmeg. In another bowl, beat butter and brown sugar until crumbly; beat in vanilla and eggs, one at a time. Add oat mixture alternately with sour cream, beating well (batter will be thick). Fold in zucchini. Pour over crumb mixture., Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool 10 minutes before removing to a wire rack. Serve warm or at room temperature; dust with confectioners' sugar before serving.

I made this for my mom's birthday and everyone loved it! Have it with a big glass of cold milk for an extra-special treat. This cake is nice and sweet but not too much with a yummy crunchy pecan topping! It will rise up very pretty in the oven and has a great flavor and texture.

1/4 cup margarine
3/4 cup white sugar
1/2 cup milk
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups frozen blueberries
1 egg
1/2 cup brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 cup chopped pecans
3 tablespoons margarine

Steps:

  • Preheat oven to 375°F Spray an 8 or 9-inch round pan with cooking spray and shake a little bit of flour all around in the pan to lightly coat the inside of pan with the flour.
  • Sift together the 2 cups flour, baking powder, and salt. Set aside.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the egg.
  • Beat in the flour mixture alternately with the milk, mixing just until combined. Fold in blueberries. Pour batter into prepared pan.
  • In a small bowl combine all topping ingredients except margarine, then cut in margarine until crumbly. Sprinkle evenly over batter.
  • Bake in pre-heated oven for around 50-60 minutes or until a toothpick inserted in center comes out clean. Cool slightly before serving.
  • Serve for a happy birthday breakfast or just when you're feeling decadent! :).

1 (16 1/2 ounce) box yellow cake mix
4 eggs
1/2 cup water
1/2 cup oil
1 (3 1/2 ounce) box instant vanilla pudding
1 cup sour cream
1 cup brown sugar
1/2 cup white sugar
1 teaspoon cinnamon
4 tablespoons butter or 4 tablespoons margarine, melted
3 tablespoons flour
1/2 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Mix together, cake mix, eggs, pudding mix, oil, water, & sour cream.
  • In a separate bowl, mix together, with a fork, the brown sugar, sugar, flour, melted butter, & optional, nuts.
  • In a greased & floured 9x13 inch cake pan, place 1/2 of cake batter. Sprinkle, on top, 1/2 of cinnamon sugar mixture. Layer the rest of the batter & then the rest of the cinnamon sugar topping. You can take a butter knife & cut through the batter, length wise & width wise, to help distribute the topping mixture. This can, also, be baked in a Bundt Pan, too, ( though it may need to bake a little bit longer).
  • Bake for 35 minutes or until top springs back to touch or toothpick comes out clean.

We love the Food Network show "Ham on the Street" in an episode we watched Chef made Rice Krispies squares with coffee on the trunk of a NYC cab with a hot plate. We decided to try them, in the kitchen of course, and they were SUPER! What a great change from the average krispie treat! NOTE: This is a recipe that I inherited from the Zaar Account and it has been drawn to my attention that the origonal recipe contains 10 oz of marshmellows, and that 16 oz might make it a little sticky. Since this hasn't been a problem so far with most reviewers and indeed some had success when adding even more marshmellow, I won't change the ingredients as stated but will mention it here in the description. I think that maybe the brand of Marshmellow you use might make a difference ? I have also added Chocolate as an optional extra for drizzling over the top, but quantity given is a "guess-timate" becuase personal preference in how thick you wish to make it, is everything!

6 cups Rice Krispies

  • Add Rice Krispies until completely coated.

1 cup sugar
2 eggs
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup sour cream
1 teaspoon vanilla extract

1 cup chopped nuts (I use pecans)
1/4 cup melted butter

Steps:

  • Heat oven to 325 degrees.
  • Grease and flour a 10-inch tube cake pan.
  • Cream butter until soft.
  • Add sugar and cream until light and fluffy.
  • Add eggs one at a time, beating after each addition.
  • Sift flour, baking soda, baking powder and salt together.
  • Add dry ingredients alternately with sour cream, beginning and ending with flour mixture.
  • Stir in vanilla.
  • Pour half of the batter in prepared pan; and add half of nut filling/topping mixture.
  • Pour remaining batter over nut mixture and top with remaining nut mixture.
  • Bake for 40 to 50 minutes or until done when tested with tooth pick.

Topping

1 tsp cinnamon
1 cup chopped nuts
Cream butter and sugar, add eggs and beat until combined. Sift flour, salt, soda, and baking powder together. Combine sour cream and vanilla. Alternate adding flour mixture and sour cream mixture to butter mixture until blended.
For topping, stir all ingredients together until blended.

Steps:

  • Preheat oven to 325 deg. F. Grease a 9x9 cake pan. Pour half of batter into cake pan, cover with topping, and then pour remaining half of batter over to cover. Bake for 45 minutes or until cake pulls away slightly from sides of pan and springs back to touch.

1 can(s) evaporated milk
1 can(s) sweetened condensed milk
1 dash(es) cinnamon
1 dash(es) nutmeg

Steps:

  • Pour evaporated milk and sweetened condensed milk in pitcher.
  • Pour HOT COFFEE into pitcher. Make sue it is hot coffee you are using. Otherwise the condensed milk will not melt and mix correctly. (Ask me how I know!) Add cinnamon and nutmeg
  • Refrigerate over night. And enjoy
  • Variations that I have tried: If using a variation I do not add the cinnamon or nutmeg. 1. We have chocolate mint growing in the yard I will put a bunch in with the coffee grounds when brewing coffee. 2. Add 1-2 teaspoons of vanilla to hot coffee. 3. Add chocolate syrup to hot coffee.
