TRADITIONAL MEXICAN SOPA (SOPITA RECIPE)

1 tablespoon avocado oil or vegetable oil
1 7 ounces package of mexican pasta. Shells, alphabet, or fideo (or vermicelli noodles, broken into 2" pieces)
¼ cup white or yellow onion (finely chopped)
6 cups chicken broth
8 oz can tomato sauce
1 cube beef or chicken bullion
¼ cup cilantro (finely chopped)
⅛ teaspoon kosher salt
⅛ teaspoon black pepper

Steps:

  • In a 4-qt. saucepan, heat the oil over medium heat. Saute the pasta until slightly browned. Keep stirring constantly to brown all sides. About 5 minutes.
  • Add the onions and saute for another 1 to 2 minutes until soft.
  • Add the broth, tomato sauce, beef bullion, cilantro, pepper & salt.
  • Bring to a boil, and reduce heat to medium low; simmer until the noodles are tender, about 15 minutes.

1 ripe Hass avocado, peeled, pitted, and halved;
1/4 cup sour cream
2 teaspoons lime juice
1 tablespoon finely chopped cilantro leaves, plus leaves for garnish
Salt and freshly ground black pepper
1 cups store-bought fresh salsa
1/2 cup canned black beans rinsed and drained
1/2 cup frozen corn kernels, defrosted, rinsed and drained
2 scallions, white and light green parts only, chopped
Dash hot sauce, or more to taste
20 round tortilla chips

Steps:

  • Place the avocado in a bowl. Mash with a fork and add the sour cream, lime juice, and chopped cilantro. Season with salt and pepper. Stir well and mix to form a cream. Set aside.
  • In another mixing bowl, combine the salsa, black beans, corn, scallions, and hot sauce; season with salt and pepper. Mix well.
  • Take 1 of the tortilla chips and add a small dollop of the avocado cream. Top with the corn mixture. Garnish with a cilantro leaf.

SWEET POTATO OVEN FRIES WITH AVOCADO DIP



Sweet Potato Oven Fries with Avocado Dip image

2 large sweet potatoes, peeled or unpeeled, cut into 4-inch long and 1/4 to 1/2-inch thick fries
2 tablespoons olive oil, or more as needed
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
Coarse ground rock salt and freshly ground black pepper, to taste
Avocado Dip, recipe follows
1 avocado, see Cook's Note*
1/3 cup mayonnaise
1/3 cup cream cheese
1 jalapeno, seeded and chopped.
2 scallions, white and light green part only, chopped
1 lime, juiced
Salt and freshly ground black pepper

Steps:

  • Preheat your oven to 450 degrees F. Line a baking sheet with aluminum foil and set aside.
  • Place the sweet potatoes in a large bowl and toss with olive oil until the sweet potatoes are coated. Add the paprika, chili powder, coriander, salt, and pepper; toss to distribute evenly.
  • Arrange the coated fries in a single layer on the prepared pan. Bake for 20 minutes on the lower rack until the sweet potatoes soften. Transfer the pan to the upper rack of the oven and bake 10 minutes longer, until fries are crispy. Serve with Avocado Dip.
  • Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste. Serve as a dip for the Sweet Potato Oven Fries.
  • * Cook's Note: We find that Hass avocados make the smoothest and best tasting Avocado dip.
