As the summer heat begins to wane and berries are at their juicy peak this Blueberry Torte is this perfect end of summer treat. Bursting with blueberries, this simple torte is a springy cake-like dessert you'll want to devour.

8 tablespoons Unsalted Butter (room temperature)
3/4 cup Sugar
1 teaspoon Baking Powder
1/2 teaspoon Salt
2 large Eggs (room temperature)
1 teaspoon Vanilla Extract
1 teaspoon Lemon Zest
1 cup All-Purpose Flour
2 cups Fresh Blueberries
2 tablespoons Sugar
1 teaspoon Cinnamon

Steps:

  • Preheat the oven to 350ºF and lightly grease an 8" or 9" square pan or a 9" or 10" round pan.
  • In the bowl of an electric mixer fitted with the paddle attachment or using a medium-sized mixing bowl and hand-held mixer beat the butter and sugar until creamy, about 4 to 5 minutes.
  • Mix in the baking powder, and salt until smooth. Add the eggs, one at a time, scraping down the bowl after each addition. Mix in the vanilla extract and lemon zest. Pour the flour into the mixture and continue mixing until it's well combined and a thick batter is formed.
  • Using a spatula spread the batter into the prepared pan evenly and top with the blueberries. Gently press some of the blueberries into the batter.
  • In a small bowl mix the cinnamon and sugar together and sprinkle over the top of the cake.
  • Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean and the outer layer is golden brown.

½ cup butter, melted
½ cup white sugar
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 cup whipped topping (such as Cool Whip®)
1 (21 ounce) can blueberry pie filling

Steps:

  • Mix graham crackers, butter, and white sugar together in a bowl; press mixture into the bottom of a 9x13-inch baking dish. Chill crust until firm, about 1 hour.
  • Beat cream cheese and confectioners' sugar together in a bowl until light and fluffy, 2 to 3 minutes. Fold in whipped topping.

3 tablespoons plus 1/2 cup sugar, divided
1-1/4 cups all-purpose flour
1 package (8 ounces) reduced-fat cream cheese
1 cup confectioners' sugar
1 carton (12 ounces) frozen reduced-fat whipped topping, thawed
2 tablespoons cornstarch
3/4 cup cold water
3 cups fresh blueberries

Steps:

  • In a small bowl, cream butter and 2 tablespoons sugar. Gradually add flour and mix well. Press onto the bottom of a 13-in. x 9-in. baking dish coated with cooking spray. , Bake at 350° for 12-14 minutes or until set and edges are lightly browned.
