2 red onions, in fine slices
2 garlic cloves
5 big peppercorns
5 small peppercorns
2 laurel leaves (bay leaves)
1 sprig thyme
1 sprig marjoram
1/2 cup vinegar
2 tablespoons cooking oil

Steps:

  • Sautee onion and garlic in cooking oil.
  • Add the spices and the herbs.
  • Pour vinegar into the mixture, and once it starts boiling, turn off heat.
  • Let cool before serving.

For the pickled red onion::
2 red onions, peeled and thinly sliced
1/2 cup vinegar
1/4 cup orange juice
1/2 teaspoon dried oregano or thyme
salt and pepper to taste

Steps:

  • Preparation: Place onions in a saucepan, add water to cover, bring to a boil and remove from heat. Drain and rinse in cold water to stop the cooking process. Place the onions in a non-reactive container with the remaining ingredients and allow to sit for several hours before serving. They keep up to one week in the refrigerator. Makes about 3 cups.
