2 cups old-fashioned oats
1/2 cup pecan halves
1/2 cup sliced almonds
1/4 cup sunflower kernels
1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 cup butter, cubed
1/4 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cherries
1/2 cup dried blueberries
PARFAITS:
2 cups fresh blueberries
2 cups fresh raspberries
2 cups chopped fresh strawberries
4 cups honey Greek yogurt

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. In a small saucepan, mix butter, honey and cinnamon. Cook over medium heat until blended, 3-4 minutes. Remove from heat; stir in vanilla. Pour over oat mixture; stir to coat., Spread evenly into a greased 15x10x1-in. baking pan. Bake until crisp and dark golden brown, 35-40 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruit., In a small bowl, combine berries. Layer 1/4 cup of the berries, yogurt and granola into 8 parfait glasses. Repeat layers. Top with remaining berries.

2 cups plain yogurt
2 cups your favorite granola
2 cups fresh berries (raspberries, blueberries, strawberries (hulled and sliced), and/or other fruit such as bananas, peaches or mangos, peeled and sliced
4 tablespoons honey

Steps:

  • Line up 4 parfait, white wine, or other tall glasses.
  • Spoon 2 tablespoons of yogurt into each glass and smooth surface.
  • Spoon 2 tablespoons of granola overtop and smooth surface.
  • Spoon 2 tablespoons of fruit overtop and smooth surface.
  • Repeat the process, adding a bit of honey here and there, to taste.

1 1/2 cups old-fashioned rolled oats
1/3 cup sliced almonds
1/3 cup black chia seeds
1/3 cup unsweetened coconut flakes
1/3 cup sunflower seeds
1/3 cup chopped walnuts
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse sea salt
3 cups 2-percent yogurt
3 cups assorted fresh berries, grapes, cut-up bananas or apples

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Stir together the oats, almonds, chia seeds, coconut flakes, sunflower seeds, walnuts, maple syrup, vanilla and cinnamon in a large bowl. Pour the mixture onto the prepared baking sheet and season with the salt. Bake, stirring halfway, until the nuts are golden brown, 20 to 30 minutes. Let cool. The granola will keep in an air-tight container for up to 1 week.
  • Put 1/4 cup yogurt in a juice or parfait glass and top with 1/4 cup fresh fruit and then 1/4 cup granola. Repeat with the remaining ingredients in 5 more glasses and serve.

1 cup granola cereal, divided (I prefer homemade)
mixed fruit (optional)
