2 cups vanilla yogurt
1/2 cup honey

I love cooking with my nieces and nephews, and these kabobs are a great way to get the kiddos involved in the kitchen. Everyone can choose their own combination of fruit to thread onto the kabobs, and the dip is a great make ahead recipe that will keep fresh in the refrigerator for several days.

1 1/2 cups cantaloupe chunks
1 cup fresh blackberries
8 ounces fresh strawberries, halved if large
1/2 fresh pineapple, cored and cut into bite-size chunks
3 kiwis, peeled and cut into bite-size pieces
One 8-ounce package cream cheese, at room temperature
8 ounces fresh strawberries, stemmed
4.4 ounces vanilla whole milk yogurt, such as Siggi's
3 tablespoons honey

Steps:

  • For the fruit kabobs: Thread the fruit onto eight 12-inch metal or wooden skewers. Chill until ready to serve.
  • For the strawberry cream cheese and yogurt dip: Put the cream cheese, strawberries, yogurt and honey in a food processor and pulse until the strawberries are minced and the mixture is smooth. Serve with the kabobs.

This is great with all kinds of fruit (strawberries, blueberries, kiwi, bananas, grapes, canteloupe, apples, etc.). When one of my friends stayed with me during a visit, I came up with this for a quick breakfast before we headed out for the day. If I make it for just a few people, I serve it on the side so you have the option to dip your fruit or top it with as little or as much as you prefer. I make a big bowl of fresh fruit (8-10 cups of whatever is in season) along with this recipe. I have also served it for a family brunch and used this as a yogurt dressing for the fruit. I came back with no leftovers, and several requests for the recipe. This stuff is good!!!

1 (3 ounce) package reduced-fat cream cheese (softened)

1 small pineapple
3 large peaches (firm)
2 large bananas (firm)
3 apples (crisp variety)
1 bunch seedless black grapes
1 large orange, juice and zest of, grated
60 ml brandy (4 Tablespoons) or 60 ml orange liqueur (4 Tablespoons)
50 g unsalted butter (melted, 2 oz)
200 ml plain yogurt (7 fl oz)
45 ml clear honey (3 Tablespoons)
fresh mint sprig

Steps:

  • Peel the pineapple, clean out the "eyes" and dice into small cubes.
  • Peel and pit the peaches and dice.
  • Peel the bananas and slice into thick chunks.
  • Do not peel the apples, do quarter and core them, then cut each quarter in half across-ways.
  • Put all fruit together in a bowl, add the juice of the orange, the rind, liqueur/brandy and mix gently.
  • Leave to marinate for 30 minutes.
  • Thread the fruit pieces onto skewers and brush with the melted butter.
  • Place on the BBQ/Grill for 10-15 minutes turning frequently.
  • To Make the dip, whisk together the yogurt and 30 ml (2 Tablespoons) of the honey.
  • Pour the dip into a serving bowl and drizzle the remaining 15 ml (1 Tablespoon) honey over the top, garnish with mint.
  • Serve the fruit kebabs hot with the yogurt dip.

8 - metal or bamboo skewers
1 cup(s) plain yogurt
2 tablespoon(s) honey
1 teaspoon(s) grated lime zest

Steps:

  • Heat grill to medium-high and make sure grate is clean.
  • Thread chunks of washed, peeled or seeded fruit onto skewers. If using bamboo skewers, soak in water for 10 minutes to minimize chances of burning.
  • Grill for 3 to 4 minutes per side, turning carefully so fruit does not fall off of skewers.
  • Remove from heat and serve with dip.
  • For dip: Combine yogurt, honey and lime zest and stir until well blended. Keep chilled until serving time.

good quality paper towels
1/2 cup plain yogurt or 1/2 cup curds (I use curds)
1/8 teaspoon ground cinnamon
1 teaspoon pure maple syrup

Steps:

  • Line a colander with about 4-6 layers of paper towels, covering the bottom of the colander completely.
  • Rest the colander on another pot to collect the whey.
  • Gently pour the yogurt over the paper towels, cover with cling-wrap (or with anything else) and let it sit in the refrigerator overnight or for 8 hours.
  • The next morning, after a good night's sleep, walk to your refrigerator, remove the colander from it, uncover, and carefully scrape of the now-thickened yogurt onto a small (preferably pretty) bowl.
  • Add the cinnamon and maple syrup and mix well.
  • The consistency of the dip will be that of a soft-serve ice-cream!
  • Enjoy this dip with a fresh, cold, chopped apple, or banana, or any fruit you like!
