This salad has been a regular at our church potluck dinners and is always enjoyed by many. I asked for the recipe early on and have made it many times in the past 15 years.

½ head lettuce, torn
1 cucumber, peeled and chopped, or more to taste
3 cups frozen peas, thawed
2 cups shredded Cheddar cheese
4 hard-boiled eggs, peeled and sliced
1 cup creamy salad dressing (such as Miracle Whip®)
½ cup white sugar
2 tablespoons white vinegar
12 ounces cooked crumbled bacon

Steps:

  • Layer lettuce, cucumber, peas, Cheddar cheese, and egg, respectively, in a 9x13-inch casserole dish.
  • Whisk creamy salad dressing, sugar, and vinegar together in a bowl until dressing is smooth; spread over the egg layer. Crumble bacon over dressing layer.

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

1 pound bacon
1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 ¼ cups mayonnaise
2 tablespoons white sugar
⅔ cup grated Parmesan cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  • In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
  • Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

This seven-layer salad takes some inspiration from the salads they sell at Boots (pasta shells and julienned carrots) and some inspiration from my grandmother (curry powder and brown sugar). This makes a really refreshing, flavorful salad that I simply love and that my friends request at barbeques!

2 cups small seashell pasta
4 carrots, peeled and julienned
½ head leaf lettuce - rinsed, dried, and chopped
1 medium cucumber, peeled, seeded, and diced
¾ cup frozen green peas
½ cup frozen whole-kernel corn
2 cups mayonnaise
2 tablespoons brown sugar
1 tablespoon curry powder
½ teaspoon garlic salt
1 cup shredded Cheddar cheese

Steps:

  • Bring a pot of lightly salted water to a boil. Add the pasta, and cook until tender, about 7 minutes. Drain, and rinse under cold water to cool.
  • Place the carrots in an even layer in the bottom of a large glass bowl, preferably one that is roughly the same diameter from top to bottom. Place the lettuce in a layer over the carrots. Combine the cucumber, peas and corn; spread in a layer over the lettuce. Once the pasta is cooled and drained, then spread that out over the top.
  • In a smaller bowl, stir together the mayonnaise, brown sugar, curry powder, and garlic salt. Spread this carefully over the pasta. Top with shredded Cheddar cheese. Cover, and refrigerate for at least 1 hour before serving.

There are probably as many versions of this as there are Moms in the world. This is Candy's Mother's recipe.

1 head iceberg lettuce, torn up
6 eggs, boiled, peeled and chunky diced
1 cup celery, diced
1 cup onion, diced
1 lb bacon, crumbled
1 (16 ounce) can peas, Leisure brand works best
1 1/2 cups Miracle Whip
cheese, shredded

Steps:

  • In a 9x13-inch pan, start with a layer of lettuce, then hard boiled egg, celery, onion and bacon. Note: We buy the bacon already crumbled and use about 1 lb of that.
  • Drain peas and layer on top of bacon.
  • Spread Miracle Whip salad dressing over peas.
  • Top with shredded cheese.
  • Refrigerate at least 2 hours before serving.
  • Note: Very forgiving recipe. We always add more bacon and sometimes substitute Ranch dressing for the Miracle Whip.

This 7 layer salad recipe sounds like a bunch of vegetables thrown together, but every occasion people ask me if I will make this, it is really gooooooood. Overnight chilling not included in preparation time.

1 green pepper, chopped
1 cup celery (I leave this out)
1 small onion, chopped
1 cup frozen peas, uncooked
2 cups Miracle Whip (I use the Lite)
2 teaspoons sugar (You can use Equal or Sweet and Low)
1 (4 ounce) jar Bacos bacon bits (you can also use crumbled leftover bacon)
2 cups cheese, shredded

  • Layer all of the above vegetables in order, evenly.
  • Cover with plastic wrap securely and refrigerate overnight.

My Nana has no shortage of delicious recipes from appetizers to desserts that she has passed down to me since I began cooking. This salad is not only yummy, but it's so quick and easy to prepare and definitely one of my all-time favorites!

1 ¼ cups mayonnaise
4 cups torn iceberg lettuce
2 large Roma (plum) tomatoes, or more to taste, chopped
1 (6 ounce) can sliced black olives, drained
1 (10 ounce) package frozen peas, thawed
1 (4 ounce) can sliced water chestnuts, drained
½ cup cooked crumbled bacon

Steps:

  • Mix Cheddar cheese and mayonnaise together in a small bowl.
  • Pat lettuce into an even layer in the bottom of a large glass serving bowl. Layer tomatoes, black olives, peas, and water chestnuts, respectively, into the bowl. Spread Cheddar cheese mixture over the water chestnuts layer; top with bacon.
  • Cover bowl with plastic wrap and refrigerate until salad is chilled, at least 30 minutes.

This is one of my favorite salads......add chopped cooked chicken or crumbled bacon to make this into a main dish.

1 head lettuce, torn in small pieces
1 head cauliflower, cut small
5 ounces frozen peas, thawed
1 lb crisp bacon, chopped
1/2 medium red onion, sliced in thin rings
1/2 cup parmesan cheese
1/4 cup sugar
2 cups Hellmann's mayonnaise

Steps:

  • Using a large bowl, place in layers in the following order.
  • lettuce
  • cauliflower
  • peas
  • bacon
  • red onion.
  • Mix the parmesan cheese, sugar and mayo together and "frost" the top of the layered veggies
  • Cover and chill 8 hours or overnight.
  • When ready to serve, let stand at room temperature for 10 minutes before tossing.
  • Can be cut in half for less people.
