1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
3 large eggs, at room temperature
1 ½ cups granulated sugar
1 cup canola oil
2 cups grated yellow squash (from 2 medium [6 1⁄2 oz. each] squash
1 tablespoon lemon zest plus 2 Tbsp. fresh juice (from 1 lemon)
2 cups unsifted powdered sugar
2 tablespoons whole buttermilk
1 teaspoon lemon zest plus 1 Tbsp. fresh juice (from 1 lemon)

Steps:

  • Prepare the cake: Preheat oven to 350°F. Coat a 10-cup Bundt pan with baking spray. Stir together flour, baking powder, baking soda, and salt in a bowl. Place eggs, sugar, and oil in bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and airy, about 3 minutes, stopping to scrape down sides as needed. Stir in squash, lemon zest, and juice. Gradually add flour mixture, beating on low speed until just combined, about 45 seconds. Pour batter into prepared pan.
  • Bake in preheated oven until a wooden pick inserted in center comes out clean, 50 to 55 minutes. Cool in pan 10 minutes. Invert onto a wire rack; cool 1 hour.
  • Prepare the glaze: Whisk together all ingredients in a bowl until smooth. Drizzle over cooled cake.

1 stick unsalted butter
1/2 cup all-purpose flour
1 cup sugar

Three 9-inch prepared frozen pie shells, defrosted

Steps:

  • Put the squash in a large pot and fill with water. Bring to a boil over medium heat and cook until tender, 20 minutes. Drain and press the squash with a spoon to remove any excess water.
  • Preheat the oven to 350 degrees F.
  • Transfer the squash to a blender. Add the butter and flour and blend until pureed. Add the sugar, lemon extract and eggs and blend until smooth. Evenly divide the filling among the pie shells.

For the Pastry:
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon granulated sugar
4 tablespoons butter (well-chilled)
4 tablespoons shortening (well-chilled)
3 to 4 tablespoons ice water (or enough to hold the ingredients together)
For the Squash Filling:
5 medium summer squash (2 1/2 to 3 cups mashed)
1/2 teaspoon salt (plus more, to taste)
2 large eggs
1 large egg yolk
3/4 cup granulated sugar
1/4 cup heavy cream
1/4 cup melted butter
2 teaspoons vanilla extract
2 tablespoons all-purpose flour
Optional: grated nutmeg

Steps:

  • Gather the ingredients.
  • In a food processor, pulse the 1 1/2 cups of flour, 1/4 teaspoon of salt, 1 tablespoon of sugar to blend. Add the pieces of cold butter and shortening and pulse in four 2-second bursts, or until the mixture is blended but there are still pieces of fat the size of small peas.
  • Add 3 tablespoons of ice water in a steady stream while the processor runs. Turn it off and continue adding small amounts of ice water while pulsing, until the dough forms large clumps and holds together when squeezed.
  • Transfer the dough to a floured surface and lightly work it to make a cohesive dough . Don't overwork the dough. Pat it into a disk and wrap it in plastic wrap. Refrigerate the disk for about 30 minutes.
  • Heat the oven to 400 F.
  • On a floured surface, roll the chilled dough out to a circle about 2 inches larger in diameter than the pie plate. Fit the dough into the pie plate. Trim and flute as desired.
  • Fit a sheet of foil over the bottom and sides of the crust and fill it with pie weights or dry beans.
  • Bake the lined crust with the weights for 15 minutes. Reduce the oven temperature to 375 F.
  • Remove the weights and foil and return the crust to the oven. Bake for about 8 minutes longer. Remove the crust to a rack and set aside.
  • Gather the ingredients.
  • Rinse the squash; pat dry. Slice the squash into 1/4-inch slices.
  • Fill a large saucepan with about 2 inches of water; bring the water to a boil over medium heat. Add 1/2 teaspoon of salt to the water along with the sliced squash. Reduce the heat to medium-low and cover the pan; cook for about 5 to 7 minutes, or until the squash is tender. Drain the squash.
  • Transfer the drained squash to the empty saucepan or to a bowl and mash. Carefully drain off any excess water. For a very smooth filling, process the squash in a blender or food processor.
  • In a large bowl, whisk the two eggs and egg yolk. Whisk in the 3/4 cup of sugar, heavy cream , melted butter , vanilla, 2 tablespoons of flour, and the nutmeg, if using. Add the mashed squash and blend thoroughly.
  • Pour the squash mixture into the baked pie shell and place it on a baking sheet. (If you happen to have some leftover filling, put it in buttered ramekins and bake it alongside the pie. If desired, lightly sprinkle grated nutmeg over the filling.
  • Bake the pie at 375 F for 35 to 45 minutes, or until the filling is set and firm. When the crust is browned, place a pie shield over the edge to avoid over-browning.

My mom made this pie all the time growing up. It is really great for kids and those who don't like squash too much. It really is a pie- it's sweet and yummy. People are surprised when you tell them that it has squash in it. It can be frozen for the winter as well and is a great way to have yummy squash all year long. I even like eating them frozen- like ice cream.

1 1/4 cups sugar
2 tablespoons flour
1 cup milk
1 teaspoon vanilla

  • Add flour (sifted) and sugar into blender.

2 c yellow squash
1 pie shell, baked ( i prefer graham cracker)
1 c evaporated milk
2 c sugar or sugar cinnamon mix (or splenda)
1 egg
2 tsp butter
3 tsp all purpose flour (or baking mix)
1 1/2 tsp vanilla extract
1/2 tsp cinnamon (if you don't use sugar/cinnamon mix)
1/4 Tbsp freshly grated nutmeg

Steps:

  • 1. Cook squash until tender. Drain squash. Excess water will make pie too "mushy." Allow squash to cool for 10-15 minutes.
  • 2. Put all ingredients into a blender or food processor and puree.
  • 3. Pour into pie shell & top with a sprinkle of brown sugar & cinnamon.
  • 4. Bake on middle rack @ 325 for 50-65 minutes. Let cool on pie rack.
  • 5. Top with Ice Cream or a slice of cheese, depends on the area you were raised! I have also topped it with some good condensed milk as well!! Just add your own flair to the pie whether it be sweet or spicy!!

Steps:

  • In a bowl, combine the first five ingredients. Whisk in egg yolks and milk. In a small bowl, beat egg whites until stiff peaks form; gently fold into squash mixture.   • Preheat oven to 350 degrees F.
  • Cook (steaming works well) enough yellow squash (crookneck, not butternut or such) to a nice soft consisitency, enough to equal 2 full cups cooked and drained, about 20 minutes.
  • In mixing bowl, combine squash, eggs and sugar; stir, but do not beat.
  • Add lemon extract.
  • Pour into a lightly buttered pie plate and bake approximately 40 minutes at 350 degrees or until pie is custard consistency. Let cool and chill in refrigerator.

Its creamy, easy and delicious.I used to tell my kids it was a dessert pudding, and it was years before they realized they were eating squash. It has a nice vanilla taste. You can use splenda as a substitute for the sugar. Hint: Precook your squash by peeling, seeding, cubing and boil it in enough water to cover it, for about 20 minutes, then drain throughly.

3 tablespoons extra-virgin olive oil
1 large white or yellow onion, chopped (about 1 1/2 cups)
Salt and pepper
2 pounds butternut squash or winter squash, peeled, seeded and cut in 1-inch cubes (about 8 cups)
4 cups shredded kale, chard or other sturdy cooking green (from one 8-ounce bunch)
1 tablespoon roughly chopped sage
1 tablespoon roughly chopped thyme
2 garlic cloves, minced
Pinch of red-pepper flakes
2 (8-ounce) puff pastry rounds, or use 2 (14-ounce) puff pastry rectangles
5 ounces provolone, cut in 1/4-inch cubes (about 1 cup)
3 tablespoons grated Pecorino Romano
1 egg, beaten

Steps:

  • Put oil in a wide skillet over medium-high heat. Add onions, and season generously with salt and pepper. Cook, stirring, until softened and lightly browned, 5 to 7 minutes. Reduce heat if onions are browning too quickly.
  • Transfer onions to a large bowl. Add squash cubes, kale, sage, thyme and garlic. Season with salt and red-pepper flakes, and toss well to coat.
  • Heat oven to 350 degrees. Roll the puff pastry rounds to 12 inches in diameter (or roll and trim pastry rectangles to achieve two 12-inch rounds). Line a 10-inch pie pan or other shallow round baking dish with one 12-inch round of pastry. Add squash filling, piling it high. Sprinkle with provolone and pecorino. Lay the remaining pastry round over filling and crimp edges to seal. Paint the top of pie with beaten egg.
  • Place the pie on a rimmed baking sheet to catch drips. Transfer to oven, and bake for about 1 hour, until pastry is nicely browned and squash is soft when probed with a paring knife. (Start checking at the half-hour mark and the 45-minute mark to make sure the pastry isn't browning too quickly. Tent with foil, if so.) Allow to rest at least 10 to 15 minutes before cutting into large wedges and serving.
