8 medium yellow squash, shredded
1 onion, shredded
1 ½ tablespoons salt
1 cup all-purpose flour
½ cup cornmeal
1 egg, lightly beaten
1 cup shredded Cheddar cheese
ground black pepper to taste
1 tablespoon vegetable oil

Steps:

  • Place the squash and onion in a colander, sprinkle with salt, and drain about 30 minutes, until no longer moist.
  • In a bowl, mix the squash and onion, flour, cornmeal, egg, and cheese. Season with pepper.
  • Heat the oil in a skillet over medium heat. Drop squash mixture by heaping tablespoonfuls into the skillet, and cook 3 minutes on each side, or until golden brown.

This is a good recipe for squash that has been cooked and you don't know what else to do with it. My family just love them.

Number Of Ingredients 9

3 cups yellow squash, cooked and drained
1/3 cup onion, chopped (I've also used green onions)
1 egg
1/2 teaspoon season salt
1 teaspoon sugar
1/2 teaspoon salt, if not already seasoned
1/4 teaspoon pepper
3/4 cup self-rising flour
oil (for frying)

Steps:

  • In a bowl, add the squash, onion, egg and seasonings.
  • Mix in the flour alittle at a time, stir until thick enough to drop by spoonfuls.
  • In a fry pan, heat oil till hot about 350.
  • Fry till lightly brown on both sides, remove and drain on a paper towel.
  • Serve warm.

8 yellow squash, grated
1 medium onion, finely diced
2 tablespoons salt
1 cup self-rising flour
1/2 cup cornmeal
1 egg
1 cup grated cheddar cheese (optional)
black pepper
2 -3 tablespoons oil (for frying)

Steps:

  • Place grated squash and onion in a colander over sink and sprinkle with salt. Let them drain over the sink until all moisture is gone. Add flour, cornmeal, pepper, egg and cheese. Mix well. Form into patties and fry in a little oil.

From my 10yr old to my Father-in-Law - this one is a family favorite! Good way to get vegetables into those picky eaters

6 large yellow squash
1 c all purpose flour
1/2 c self-rising buttermilk corn meal
2 large egg yolks
1 large onion
3 c cheddar cheese, shredded
1 tsp salt
1 tsp black pepper
2 Tbsp canola oil

Steps:

  • 1. wash peal and shred the yellow squash
  • 2. mix all ingredients together in mixing bowl except canola oil
  • 3. heat canola oil in drying pan until sizzling- then spoon the mixture into the hot oil - fry until golden brown.
  • 4. enjoy!!!!!!!
