CANADIAN YELLOW SPLIT PEA SOUP WITH HAM
Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

Steps:
- Place split peas, ham bone, carrots, onion, celery, thyme, bay leaf, salt, and pepper into a large pot; pour in water. Bring mixture to a boil and skim off any foam with a spoon. Reduce heat; place a lid on the pot slightly ajar to allow some evaporation. Simmer, stirring occasionally, until peas are tender and soup is thick, about 3 hours.
- Remove ham bone from soup; strip meat from ham bone, chop meat, and return it to the pot.

- Melt butter over medium-low heat in a large stockpot or Dutch oven. Cook onion, celery and carrots with salt and pepper until onion is soft, about 7 to 10 minutes. Add the turmeric, stock, peas, potatoes, and ham hock, and simmer, covered, about 1 hour. Remove the ham hock. Puree soup in a blender or food processor until smooth. Return to clean pot, and adjust the seasonings. Serve immediately in flat soup dishes with wide (3-inch) rims, garnished with dark bread croutons. Place brown mustard on the rims of the bowls, and take a little mustard with each spoonful of soup.

- Put the onion in a large non stick saucepan over medium low heat.
- Cook for about 5 minutes, stirring constantly, until the onion is wilted and translucent.
- Add the garlic, stir and continue to cook for 1 minute.

- Raise the heat to medium and bring to a boil.

- Soup:
- Heat a large heavy pot over medium and pour in oil. Add onion and carrots, season with a five-finger pinch of salt, and cook, stirring often, until vegetables are very tender and just taking on a hint of color at the edges, about 5 minutes. Lightly crush fennel seeds with a mortar and pestle, or roughly chop them. Add fennel seeds, curry, and mustard seeds to pot and cook, stirring, until fragrant (the mustard seeds may begin to pop), less than a minute. Add split peas, stir to coat, then add stock and 4 cups water. Increase heat and bring to a boil, then simmer, stirring occasionally and adding more water if soup looks too thick, until split peas are very tender and some are starting to disintegrate, 50-55 minutes.
- Mash soup with a potato masher until split peas are in small pieces and soup is textured but creamy (if you prefer a smoother soup, use an immersion blender directly in the pot). Taste and adjust seasoning with more salt.
- Coconut and assembly:
- While the soup is simmering, lightly crush coriander, fennel, and mustard seeds.
- Heat oil in a small skillet over medium and cook coconut flakes and spices, stirring constantly, until spices are sizzling and coconut is golden brown, about 1 minute. Transfer to a plate, season with salt, and let cool (coconut will crisp as it cools).
- Serve soup topped with spiced coconut and cilantro.

- Wash the yellow split peas carefully. Cover them with chicken broth, add the chopped onions, salt pork, bay leaf and herbs and bring to a boil. Lower the heat and simmer, partially covered, for 1 to1 1/4 hours or until the peas are tender but have not fallen apart.
- Remove salt pork from the soup; discard the bay leaf and season soup to taste with salt and pepper. Cut the salt pork into 1/4 inch slices. Place a few slices of pork in individual serving bowls, ladle soup over the pork and serve with good rye bread.

- Bring the peas, water, and bay leaf to a boil, then simmer until the peas are completely soft, about 45 minutes.
- Remove bay leaf, press peas through a sieve and return the puree to the soup pot.
- Melt butter and olive oil in a skillet over medium heat.
- Add onions and cook until soft. Add carrot, celery, garlic, salt, and ground cumin, and cook 10 minutes.

CROCKPOT YELLOW SPLIT PEA SOUP

- 1. Wash and rinse yellow split peas. Turn your crock pot to a high setting.
- 2. In a saute pan, add a tablespoon olive oil, add the chopped turkey bacon (you can also use ham) and cook until brown. Add diced garlic and cook for a few minutes. Throw in your chopped onion and cook until tender. Remove vegetables from pan. Note: I buy the thick sliced turkey bacon from the Pennsylvania Dutch Market.
- 3. In the same pan, add a tablespoon of butter and your diced celery and carrot and cook about 5 minutes. Add 32 ounces of chicken broth and heat just to boiling.
- 4. Add the peas to the crock pot, and the hot chicken broth with the vegetables, onions and garlic. In the same pan, add 2 cups of water and heat just to boiling and add them to your crock pot also.
- 5. Add all the herbs to the crock pot (salt, pepper, dry mustard, celery seed, parsley, red pepper flakes, rosemary, bay leaves, etc). Turn the crock pot to low setting for the remainder of cooking time.
- 6. I cook overnight for about 10 hours. Check the peas for doneness. Remove about 1 cup of peas from the pot and put in food processor to make a paste. Add the paste to your pot and stir. The soup will thicken when cool.
YELLOW SPLIT PEA, KALE AND ITALIAN SAUSAGE SOUP

- 1-Heat oil in a large soup pot over medium heat, When hot (though not smoking) add onion and cook until just starting to soften (make sure you stir during this process). 2-Add garlic and cook one minute. Then add the yellow split peas, 8 cups of water, and the dried basil and cumin. Bring to a simmer and cook covered for about 30-40 minutes, until the yellow split peas are soft (but not mushy). 3-Add the kale and tomatoes and cook for 10 to 15 minutes, until the kale is soft. Meanwhile, fry up your sausage in a saucepan over med-high heat, stirring the meat and breaking up clumps, until cooked all the way through. If there is any fat, drain away. 4-Add the sausage and vinegar and add about 2 teaspoons of sea salt and one teaspoon of pepper and adjust to taste. Enjoy!

This is from a veg cookbook purchased on the checkout lane at the grocery store but I'm not sure which. It is a lovely soup, and it gets better over a day or so. The ingredient list appears lengthy, but it is largely due to the yummy combination of spices. The original recipe calls for a combination of any veggies as long as you reach 4 cups (or a 16 oz bag of frozen veggies). I list specific veggies here as they are the ones recommended in the recipe.

- In a medium pan bring water and salt to a boil; add split peas and return to boiling. Reduce heat and simmer, covered, about 45 minutes or until tender. Do not drain.
- Meanwhile, steam vegetables until crisp tender.
