4 cups water or 4 cups stock
2 1/2 cups long-grain rice
1 teaspoon turmeric
1 cinnamon stick
1/2 teaspoon ground cinnamon
1 -2 tablespoon sugar, white or brown
salt and pepper, to taste
1/2 cup raisins (sultanas are best)
butter (optional)

Steps:

  • Add the water or stock to a large saucepan and bring to a boil over medium heat. Add the remaining ingredients and return to a boil. Reduce heat to low, cover tightly and simmer for 15 minutes.
  • Remove from heat and set aside, covered, for another 5-10 minutes. Discard cinnamon stick, fluff with a fork and serve hot.
  • Optional, Stir 1-2 tablespoons of butter into the cooked rice at the end.

An easy side dish also known as funeral rice. Everyone's stove top produces different heat, adjust cooking temps as you normally do for rice. I like to substitute low salt chicken broth for the water. Use your favorite rice except for brown.

1 tablespoon butter
1 cup rice
1/4 cup seedless raisin
6 whole cloves
5 teaspoons salt
1/2 teaspoon turmeric
1 -2 slice fresh ginger (thin slices)
2 1/2 cups cold water
2 tablespoons butter

Steps:

  • In a medium saucepan sauté the rice in 1 tbs butter 3-5 minutes or until fragrant.
  • Add the water and bring to a boil.
  • Turn burner to lowest temp, add the raisins, cloves, salt, turmeric, and ginger.
  • Cover and simmer gently until the rice is tender and all the liquid has been absorbed, about 20 minutes, if rice isn't quite done you can add a splash more water if needed.
  • Add the butter, fluff up with a fork and discard the ginger.

Another truly South African taste experience. There are many versions of this recipe and this is mine. I serve this rice with frikkadelle accompanied by a simple beet salad and steamed greenbeans.

1 cup long grain rice
4 cups boiling water
2 tablespoons brown sugar
1 teaspoon salt
2 teaspoons turmeric
1 cinnamon stick
1 teaspoon ground cinnamon
1/2 cup raisins
1 tablespoon butter

Steps:

  • Place rice, water, brown sugar, salt, turmeric and cinnamon stick in a pot.
  • Boil over high heat 20 minutes.
  • Drain excess water.
  • Add remaining ingredients and steam rice until soft and fluffy.
  • Remove cinnamon stick before serving.
