MEDITERRANEAN SAUTEED YELLOW SQUASH RECIPE



Mediterranean Sauteed Yellow Squash Recipe image

Easy sautéed yellow squash recipe, prepared Mediterranean-style with sweet onions, bell peppers, garlic and a warm Eastern Mediterranean spice combination. You can totally tailor this recipe to your liking, check out the notes for recipe variations.

Extra virgin olive oil (I used our Greek Early Harvest olive oil)
1 sweet onion, halved and thinly sliced
3 garlic cloves, minced
4 medium yellow squash
1 red bell pepper, cored and thinly sliced
Kosher salt
Black pepper
Crumbled feta cheese (optional)
Pitted marinated olives, sliced (optional)
Handful chopped fresh parsley (optional)
1 tsp za'atar, more for later
3/4 tsp to 1 tsp Aleppo pepper (start with less if you're not sure)
3/4 tsp ground cumin

Steps:

  • Heat 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add sweet onions and cook for about 4 minutes until translucent (you can raise heat to medium-hot and toss onions regularly.)
  • Add garlic, yellow squash, and red bell peppers. Drizzle a little more extra virgin olive oil.
  • Season with salt, pepper, and spice mixture. Toss with a wooden spoon to make sure vegetables are well coated with the spices. Cook on medium-high, stirring occasionally, until squash and peppers are nice and tender (I like my squash to have some carmalized parts, so it helps to raise the heat for a little while.)
  • Transfer to a serving platter. Add another drizzle of extra virgin olive oil and a generous pinch of za'atar. If you like, add a sprinkle of crumbled feta cheese, pitted olives, and a handful of chopped fresh herbs like parsley. Enjoy!

This sautéed yellow squash is one of my all-time favorite summer squash recipes! A crispy, nutty panko topping contrasts perfectly with the tender, herb-flecked squash.

3 yellow squash
Extra virgin olive oil (for drizzling)
Fresh basil & thyme for garnish (optional)
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
1 small garlic clove (grated)
2 tablespoons parsley (finely chopped)
¼ teaspoon sea salt
Freshly ground black pepper
¼ cup panko bread crumbs
¼ cup Vegan Parmesan
1 tablespoon chopped parsley
¼ to ½ teaspoon sea salt
pinch of red pepper flakes (optional)

Steps:

  • Slice the squash into ¼-inch rounds. If the squash is large, slice the rounds into half-moons.
  • Make the herb oil: In a jar with a tight-fitting lid, combine the lemon juice, olive oil, garlic, parsley, salt, and pepper and shake to combine.
  • Make the topping: In a small bowl, combine the panko, Vegan Parmesan, parsley, salt, several grinds of pepper, and a pinch of red pepper flakes, if desired.
  • Heat a large skillet over medium heat with a few drizzles of olive oil. Add the squash and sauté for about 7 to 10 minutes, stirring occasionally so that all sides get cooked. I like to cook mine until it's soft, yet still has a firm bite, but before it becomes too watery and mushy. Remove from the skillet and toss with the herb oil. Top with the panko mixture, and fresh herbs, if desired.

1 pound winter squash, peeled and shredded
1/2 cup chopped onion
3/4 pound green cabbage, shredded
2 garlic cloves, minced
2 teaspoons finely chopped fresh sage
2 teaspoons chopped fresh thyme leaves
3 eggs
1/2 cup low-fat milk
Salt and freshly ground pepper
1 cup cooked barley, rice (preferably brown) or quinoa
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • If serving the vegetables with grains, begin cooking the grains of your choice first.
  • Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet or a wok and add the onion. Cook, stirring, until it begins to soften, about 3 minutes. Add the shredded winter squash and the garlic and a generous pinch of salt. Cook, stirring often, until not quite tender, about 10 minutes, and add the remaining oil, the cabbage, sage, thyme, and salt and pepper to taste. Continue to cook, stirring often, until the vegetables are tender and fragrant, 8 to 10 minutes. Serve with grains or use the vegetables for the gratin below.
  • If making a gratin, preheat the oven to 375 degrees and oil a 2-quart baking dish or gratin dish. In a large bowl, whisk together the eggs and milk. Add salt to taste (about 1/2 teaspoon) and freshly ground pepper, and stir in the cooked grains (I used cooked purple barley, and it was a beautiful and tasty combination with lots of texture) and the cooked vegetables. Add the cheeses and stir everything together, then scrape into the prepared baking dish.
  • Bake 40 to 45 minutes, or until the top is lightly browned and the gratin is set. Allow to cool for 15 minutes or longer before cutting into wedges and serving. The gratin is good hot, warm or at room temperature, and you can cut it into smaller pieces to serve as an hors d'oeuvre.
