OH GOODY ANOTHER CHILI RECIPE. I USUALLY DOUBLE OR TRIPLE THIS AND PLACE PORTIONS IN THE FREEZER FOR THOSE "NO TIME TO COOK" DAYS. SMALLER PORTIONS ARE GREAT FOR CHILI DOGS TOO.

2 lbs ground beef
2 medium onions, chopped
1 green pepper, chopped
2 -3 stalks celery, chopped
3 tablespoons olive oil
3 cloves garlic, minced
1 (35 ounce) can Italian tomatoes
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 cups water
2 small bay leaves
1/2 cup ground red chili powder
1/2 tablespoon Hungarian paprika
1 tablespoon cumin
1/2 tablespoon dried oregano
1 teaspoon cayenne pepper
1 (4 ounce) can green chilies, diced
1/2 tablespoon salt
1 (32 ounce) can red kidney beans (RINSED AND DRAINED)
hot cooked rice (OPTIONAL)
shredded cheddar cheese (OPTIONAL)

Steps:

  • IN LARGE STOCK POT SAUTE ONION, GREEN PEPPER, CELERY AND GARLIC IN OLIVE OIL UNTIL ONION IS TENDER.
  • ADD GROUND BEEF AND COOK AND STIR UNTIL MEAT IS BROWNED.
  • ADD REMAINING INGREDIENTS, COVER AND SIMMER 2 HOURS, STIRRING OCCASIONALLY.
  • +++FORHOTTER CHILI, ADD MORE RED PEPPER.
  • PLACE RICE IN INDIVIDUAL BOWLS, IF DESIRED.
  • LADLE CHILI OVER RICE.
  • SPRINKLE SHREDDED CHEESE OVER TOP OF CHILI, IF DESIRED.

Number Of Ingredients 10

1 1/4 lbs coarse ground beef (butcher at supermarket will grind it for you)
1 medium onion, chopped
3 garlic cloves, chopped
1 (8 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 (15 ounce) can kidney beans
3 -4 tablespoons chili powder
1 dash cumin
hot sauce, as spicy as you like

Steps:

  • Brown meat and onion and garlic in large pot.
  • Stir in remaining ingredients.
  • Stir over medium heat until mixture boils.
  • Reduce to simmer.
  • Simmer uncovered for about 90 minutes stirring occasionally.
  • I like to serve with cheddar cheese and corn bread.

1 ½ to 2 pounds ground beef or ground veal or ground pork or a mixture of these
1 whole sweet yellow onion coarsely chopped
4 to 6 cloves of garlic finely chopped
2 large cans chopped tomatoes
1 or 2 cans Rotel tomatoes & green chilies
2 cans red kidney beans (drained)
1 large jar of Spicy V-8 juice
¼ cup cumin
¼ cup chili powder
1 whole jalapeno or can use any dried hot pepper
1 teaspoon cayenne pepper, either flakes or ground
Freshly ground salt and pepper to taste
Olive Oil

Steps:

  • Heat olive oil in a large pot and put in the yellow onion and cook till tender, then add the garlic and cook for just a few minutes so it won't turn brown and burn. Put this onion-garlic mixture aside into a bowl. Then add the ground beef or ground veal to the pot and brown. After it has browned, add the onion-garlic mixture into the ground beef, stir and then add the remainder of the ingredients. Heat over a medium burner until it is hot and then turn down to medium low or low and continue cooking. The longer it cooks the more flavors it has. In fact it is best if refrigerated overnight, and then reheated the next day either on the stove or in a crock-pot. Serve with crunchy French bread, cornbread or grilled cheese sandwiches. This will serve about 8 large bowls of chili.

1 pound of ground beef
2 tablespoons olive oil
3 cloves garlic, minced
5 tablespoons chili powder
3 teaspoons ground cumin
3 tablespoons all-purpose flour
1 tablespoon dried oregano
2 (14 ounce) cans beef broth, divided
2 (14 ounce) can of tomato sauce
1 can of diced tomatoes
1 teaspoon salt
1 tablespoon of unsweetened cocoa powder
2 tablespoons of sugar
1/4 teaspoon ground black pepper

Steps:

  • Heat the oil in a large skillet over medium high heat. Saute the ground beef in the oil for 2 minutes. Reduce heat to medium and stir in the garlic. In a small bowl, combine the chili powder, cumin and flour. Sprinkle over the meat and stir until evenly coated. Crumble the oregano over the meat and pour in 1 1/2 cans of the broth. Add the remaining ingredients and stir together well, bring to a boil, reduce heat to low and let simmer, partially covered for about 90 minutes. Cool, cover and refrigerate to allow the flavors to blend overnight.

1 pound dry pinto bean, Anasazi, or kidney beans
2 pounds ground venison or burger (I prefer a coarse grind for burger)
2 large onions, cut in chunks
1 (28-ounce) can stewed tomatoes
1 (28-ounce) can tomato sauce
2 cups water
6 cloves garlic, sliced thin
3 tablespoons store-bought Mexican seasonings
1 teaspoon garlic powder
1/2 cup chili powder
1/2 teaspoon salt
1/2 teaspoon coarse ground pepper
olive oil

Steps:

  • The night before, put your beans to soak in a large stock pot with enough water to cover them with 4-5 inches of water. The next day, when you come back to camp for lunch, drain and rinse the beans.Set a 1-inch Dutch Oven over 10-15 briquets and pour in the beans with the tomato sauce and stewed tomatoes. Add the dry spices and onions as well. Let this start to simmer while you saute the garlic in 2-3 Tbsp. of olive oil in another Dutch Oven or frying pan. After the garlic turns a golden color add the meat and continue to fry for 10-15 minutes.
