Malaysian Chicken Noodle Soup image

A favorite 'chicken noodle soup' for my sick kids... can also be eaten when well. Add some Malaysian beef and potato meatball (begedil) (look for this recipe) and you take this to another level! Yummy

Number Of Ingredients 13

1/2 pound(s) chicken breast
1/2 large yellow onion sliced thinly
4 clove(s) garlic -crushed
1/4 - inch ginger - crush
1/4 - inch cinnamon stick
1 - star anise
2 - cloves
3 - cardamom
2 stalk(s) of celery cut into 1/2-inch size
6 cup(s) water
1 - tomato cut into 4 wedges
1 teaspoon(s) salt
1 teaspoon(s) black pepper

Steps:

  • Boil all the ingredients together in a large pot until a layer of oil rises to the top.
  • Take out the chicken breast and shred into small pieces.
  • Serve in a bowl with angel hair noodle or spaghetti.
  • Garnish with fresh bean sprouts, celery leaves, crushed chili pepper and the shredded chicken breast. Squeeze a little lime juice.
