AUNT DEE DEE'S APPLE COFFEE CAKE

Number Of Ingredients 16

1 (21 ounce) can apple pie filling
2 teaspoons ground cinnamon
3 cups all-purpose flour
1 cup white sugar
1 ½ cups milk
½ cup butter, softened
3 teaspoons baking powder
1 teaspoon salt
3 eggs
¼ cup packed brown sugar
¼ cup chopped walnuts
2 tablespoons butter, melted
¾ cup confectioners' sugar
1 tablespoon butter, melted
¾ teaspoon vanilla extract
2 ½ teaspoons hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
  • Mix pie filling and cinnamon, set aside.
  • Beat flour, white sugar, milk, 1/2 cup softened butter, baking powder, salt and eggs in mixing bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes.
  • Pour half of the batter into prepared pan. Spoon half of the pie filling over the batter. Spread remaining cake batter over pie filling, and top with the remaining half of the pie filling.
  • Mix brown sugar and nuts together and sprinkle over top of cake. Drizzle with 2 tablespoons melted butter.
  • Bake at 350 degrees F (175 degrees C) for 45 to 55 minutes. Allow cake to cool 20 minutes.
  • Combine confectioners sugar, 1 tablespoon butter, 3/4 teaspoon vanilla, 2 to 3 teaspoons hot water. Beat until smooth. Drizzle over cake.

4 large yams
3 tablespoons butter
1 tablespoon cornstarch
½ cup packed brown sugar
1 ½ cups apple juice
1 tablespoon lemon juice
½ teaspoon ground cinnamon
½ teaspoon ground allspice
3 large apples - peeled, cored and sliced

Steps:

  • Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
  • Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
  • Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

This is another recipe that my former mother in law shared with me. As usual, her recipes are always wonderful! This is a very nice side dish for the holiday meals. Hope you enjoy! Photo to be added later.

1 medium sweet potato
1 large (or 2 small) fresh apples
1/2 c sugar
1/2 c milk
2 Tbsp all purpose flour
1/4 c butter
1 tsp vanilla extract
1 can(s) (8-oz) crushed pineapple, partly drained

Steps:

  • 1. Preheat oven to 400 degrees. Grease casserole dish and set aside.
  • 2. Peel and slice sweet potatoes thin, crosswise. Cook in salted water until barely tender; drain.
  • 3. Meanwhile, wash, core and slice un-peeled apples; set aside.
  • 4. Mix sugar and flour in a 1 qt sauce pan; add milk. Cook over medium low heat until thickened. Add butter and vanilla; stir until butter is melted.
  • 5. Layer yams, apples and pineapple in prepared casserole dish. Pour milk and sugar mixture over all. Bake at 400 degrees until bubbly.

1 (20 ounce) can sliced apples, undrained
½ cup chopped pecans
¼ cup packed brown sugar

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the yams and apples, and place into the bottom of a 2-quart casserole dish. Stir the pecans, sugar, and cinnamon together in a bowl; scatter over the yams and apples. Drizzle the margarine over the mixture.
  • Bake in the preheated oven until the topping begins to brown, basting 1 or 2 times while cooking, about 20 minutes.

Steps:

  • In greased 2 qt casserole, layer half the yams and half the apples.

2 granny smith apples, peeled & quartered
1 stick butter, melted
1 c sugar
1 c orange juice, fresh or bottled
1 can(s) pillsbury crescent rolls, 8 count

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a medium saucepan, combine margarine, sugar and orange juice. Let simmer while you peel, core and quarter apples.
  • 3. Roll each quarter of apple in a section of crescent roll. Place in a baking dish and pour liquid over the rolls.
  • 4. Bake at 350 degrees for 35 minutes. Turn oven off. Let set 10 to 15 minutes longer in oven to continue browning.

3 tablespoons all-purpose flour
3 slices lemon, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • In the casserole dish, alternately layer the sweet potatoes and apples.
  • In a medium saucepan over medium heat, mix together brown sugar, 1/3 cup water, cinnamon, raisins, butter and salt. Cook 5 minutes.
  • In a small bowl, stir together remaining water and flour. Combine with the brown sugar mixture. Pour over the sweet potatoes and apples. Place the lemon slices on top.
  • Bake covered in the preheated oven 20 minutes. Uncover and continue baking 20 minutes, or until the sweet potatoes and apples are tender.
