Loaded Sweet Potatoes With Black Beans and Cheddar image

To make a halved sweet potato into a more substantial side, load it with black beans and sharp Cheddar, then send it back into the oven until the cheese melts and sizzles. Pair it with something a bit lighter, like fish tacos or a green salad, or build it into its own meal by adding sliced avocado, torn cilantro, a squeeze of lime juice, or even a fried egg.

2 medium sweet potatoes (8 to 10 ounces each), scrubbed and dried
1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar
Black pepper

Steps:

  • Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
  • Place cut side down on prepared sheet and roast for 30 to 40 minutes, or until completely cooked through. Take sweet potatoes out of the oven, turn them over and let cool slightly. Use a fork to rough up the flesh and slightly flatten the potatoes. Season with salt and pepper.
  • Divide half the cheese among the potato halves. Spoon the black beans over them, then cover with the remaining cheese. Return the pan to the oven and bake for another 5 minutes, until the cheese has melted and the beans have warmed through. Season with salt and pepper. Serve warm.

Make the most of leftovers from a roast chicken with these Mexican chicken and black bean wraps, which need just 15 minutes to prep. Ideal for a midweek meal

1 tbsp sunflower oil
1 onion , finely sliced
3 garlic cloves , crushed
1 tsp ground cumin
1 tsp smoked paprika
1 tsp dried oregano
400g can black beans , drained but not rinsed
about 150g cooked chicken
4 pickled chillies , chopped
3 tomatoes , roughly chopped
small handful coriander leaves , chopped
4 floured tortillas (seeded or wholemeal if you prefer)
100g cheddar , grated
100g plain yogurt
50g chipotle sauce
1 lime , quartered
guacamole (optional)

Steps:

  • Heat the oil in a frying pan, tip in the onion and fry for 5 mins until golden. Stir in the garlic, cumin, paprika and oregano and cook for 2 mins. Tip in the beans and the chicken and heat through, then stir in the chilli, tomatoes and coriander, season and keep warm.
  • Lay a tortilla in a non-stick pan, sprinkle with cheese and heat until melted. Slide the wrap onto a board, spoon over a quarter of the chicken filling and roll up tightly. Repeat to make three more wraps. Mix the yogurt and chipotle sauce and serve on the side with guacamole and lime wedges for squeezing over.

2 yams, shredded (about 2 cups, I prefer not peeling them.)
1 (15 ounce) can black beans, drained, rinsed
1 cup red onion, chopped
4 green onions, sliced
1/2 cup sunflower seeds, shelled
1/4 cup Italian dressing, lite
2 teaspoons honey
6 (10 inch) flour tortillas, warmed to soften

Steps:

  • In a skillet coated with nonstick cooking spray, saute the shredded yams over medium-high heat for 5 minutes or until crisp tender, then transfer to a bowl.
  • In the same skillet, sprayed again, saute the red onion for 5 minutes or until tender, then add the onion to the shredded yams, along with the black beans, green onions & sunflour seeds, mixing well.
  • In a small bowl, mix together the dressing & honey, before adding this to the yam mixture, tossing to coat.
  • Fill the tortillas & wrap them up.

½ teaspoon smoked paprika

1 teaspoon chili powder
½ teaspoon ground cumin
cayenne pepper, to taste
15 oz black beans, 1 can, drained and rinsed
¾ cup corn

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the sweet potatoes to a baking sheet with a drizzle of olive oil, the paprika, garlic powder, salt, and pepper. Toss until well coated.
  • Bake for 20 minutes, flipping halfway through, until the sweet potato is tender.
  • Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, add the onion and cook for 3-4 minutes, until semi-translucent. Add the jalapeño, garlic, chili powder, cumin, and cayenne pepper and cook for 2-3 minutes, until the spices are fragrant. Add the black beans and corn, season with salt and pepper, and cook until warmed through, 3-4 more minutes.

3 small sweet potatoes ((about 6 ounces) peeling is optional)
1 tablespoon chili powder
1 tablespoon cinnamon
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon kosher salt (divided)
1/2 teaspoon ground chipotle chili pepper
2 teaspoons extra virgin olive oil
1 medium yellow onion (diced)
1 large green bell pepper (cored and diced)
2 cloves minced garlic
1 can reduced sodium black beans ((15 ounces) rinsed and drained)
6 medium-sized 100% whole wheat flour tortillas
1 1/4 cups freshly grated sharp shredded cheddar cheese
Optional toppings for serving: light sour cream (or plain non-fat Greek yogurt, diced avocado, salsa, chopped fresh cilantro)

Steps:

  • Cut potatoes into 1-inch chunks. Place in a large saucepan, cover with water, then bring to a boil. Continue boiling until the potato chunks are fork-tender, about 8 minutes. Remove pot from heat, drain the potatoes, then return the potatoes to the pot and mash.
  • Stir in the chili powder, cinnamon, cumin, smoked paprika, 1/4 teaspoon kosher salt, and chipotle chili pepper until incorporated. Set aside.
  • Meanwhile, heat the olive oil in a large skillet. Add the onions and peppers and sauté until beginning to soften; about 3 minutes. Add the garlic and remaining 1/4 teaspoon salt. Continue to sauté until onions are translucent, about 5 minutes more.
  • Combine the sautéed vegetables with the sweet potato mash. Stir in black beans until all ingredients are evenly distributed.
  • Heat a large skillet over medium heat, then lightly coat with cooking spray. Place a single tortilla in a skillet, then spoon a heaping 1/2 cup of filling onto half of the tortilla and sprinkle with 3 tablespoons of shredded cheese. Fold the empty half of tortilla over the top.
  • Let cook until the bottom of the tortilla is browned and slightly crispy (about 1-2 minutes), then flip and brown the other side. Serve immediately with any desired toppings.

These wraps, however, come together so quickly and effortlessly that I make them often. They taste better than fast food meals and they're much better for you too.

1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can mexicorn, drained
2 ounces shredded monterey jack cheese
1/4 cup chopped fresh cilantro
1/4 cup bottled salsa
4 (8 -9 inch) jalapeno-cilantro tortillas

Steps:

  • Heat oven to 350 degrees F.
  • In a medium bowl, combine black beans, corn, cheese, cilantro and salsa; mix well.
  • Spoon 1/4 of bean mixture down center of each tortilla.
  • Fold in ends and then roll up each tortilla; wrap each in aluminum foil.
  • Bake at 350 degrees F for 10 minutes or until heated through and cheese is melted.
