Delicious, different and healthy way to enjoy corn on the cob. I prepare mine under the broiler, but you could easily grill this outdoors on the BBQ if you please. Got this recipe from my mom, who says she got it from Cooking Light.

4 ears corn on the cob, cleaned and trimmed
1 teaspoon chipotle chili powder
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons light sour cream
1/2 lime, cut into four wedges

Steps:

  • Mix all spices together in a small dish.
  • Place a large sheet of foil sprayed with non-stick cooking spray on the top broiler rack, which should be 6-8 inches from the broiling element.
  • Put the corn on the foil and broil on high.
  • Check corn frequently, turning every 1-2 minutes to avoid burning.
  • Corn will be done after about twelve minutes of cooking.
  • Remove corn from oven, spread sour cream on it as you would butter and season with spice mixture.
  • Serve with lime wedges, squeezing juice over entire cob just before eating.

My SIL gave me this recipe and said it's only 5 points per cup of soup. I cannot attest to how many points, but it is low fat. I've made this a few times, but have to admit I "fattened" it up, but the low-fat version is still very tasty. If you want a dish to serve for a special dinner or to company that is very rich you would need to make the following changes: Saute' your vegetables in 6 tablespoons butter over medium-high heat until onions are lightly carmelized. Substitute regular cream cheese for low fat, regular Cream of Mushroom Soup for the reduced fat version and heavy whipping cream for the fat free milk. Also, add one can (14 ounces) chicken broth. I also use double the amount of chopped onion when I make it. Yes, it does add quite a few calories and fat grams, but it is for a special occasion and you don't eat it every day. DH proclaimed this was his favorite soup (the "fattening" version. BTW, a friend who made it thought it had too much black pepper so please use your own personal preference in that area.

1 cup onion, chopped
1 cup green bell pepper, chopped
2 garlic cloves, minced
8 ounces low-fat cream cheese, 1/3 Less Fat, softened
2 cups nonfat milk
1 (15 ounce) can cream-style corn
1 (10 ounce) can low-fat cream of mushroom soup
1 (10 ounce) can Ro-Tel tomatoes
1 1/4 lbs shrimp, peeled and deveined
4 teaspoons green onions, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/8 teaspoon cayenne pepper

Steps:

  • Spray heavy dutch oven with Pam.
  • Add onion and bell pepper and saute' on medium-low for 15 minutes or until soft.
  • Stir in cream cheese and cook until cheese is melted.
  • Add milk, corn, soup & tomatoes and seasonings.
  • Simmer gently for 10 minutes, stirring to keep from sticking.
  • Add shrimp and cook an additional 5 minutes or until shrimp are pink.
  • Remove from heat and sprinkle with green onions.

Smoky, spicy and comforting this easy dish is my adaptation of a recipe found on weightwatchers.com. My favorite preparation is used here: chop, dump and simmer. The onions and leeks melt down into the base of the soup giving the liquid both body and flavor. As presented, this recipe is 5 WW points per serving and Core.

6 boneless skinless chicken thighs, about 1 1/2 pounds in total
cooking spray
1 1/2 cups leeks, thinly sliced (white and light green parts only)
3/4 cup white onion, finely diced
2 garlic cloves, minced
1/2-1 jalapeno, finely diced
1/4 teaspoon sweet paprika
1/2 teaspoon cumin
3 ears corn, kernels removed (see directions)
2 cups fat free chicken broth
1 1/2 cups white mushrooms or 1 1/2 cups cremini mushrooms, sliced 1/4 inch thick
1 medium yellow squash, sliced 1/4 inch thick
salt & pepper, to taste
cilantro (optional)

Steps:

  • Place a large soup pot or Dutch oven over medium heat. Apply a light coating of cooking spray and add the leeks, onions, garlic, and jalepenos. Cook for two minutes.
  • Cut the chicken thighs in half and add to the pot. Cook and stir for 2 minutes until the surface of the chicken is opaque.
  • Add the corn kernels, paprika, cumin and chicken broth. Milk the corn cobs by scraping the back of a knife across the surface holding the cob over the pot so the liquid drips into the soup. Bring to a light boil and reduce to simmer. Cover and cook for 20 minutes.
  • Add the mushrooms and stir in, cover and cook another 10 minutes.
  • Add the yellow squash and stir in cover and cook another 10 minutes.
  • Season the dish with salt and pepper to taste. The amounts will vary based on the type of broth used.
  • Optional: The chicken should be tender enough to cut with a back of a spoon, but if you prefer you can remove the thighs and shred the chicken.
  • Ladle into bowls and garnish with cilantro (optional).

6 medium corn on the cob, husked
1 1/2 tablespoons olive oil
3 medium garlic cloves, minced
2 medium jalapeno peppers, minced
1 cup onion, finely chopped
1/2 cup celery, finely chopped
1 1/2 teaspoons ground cumin
1 teaspoon ground turmeric
4 cups canned chicken broth
2 cups water
1 1/2 teaspoons table salt
1 teaspoon black pepper, freshly ground (or to taste)
1/2 cup sweet red pepper, chopped
1/4 cup cilantro, fresh, finely minced
1/4 cup scallion, minced (optional)

Steps:

  • Remove corn kernels from cobs with a knife; reserve cobs and 1 cup of kernels.
  • Heat oil in a large pot over medium heat. Add garlic; sauté until fragrant, about 1 minute. Add jalapeno and onions; sauté until soft, about 5 minutes. Add celery, cumin and turmeric; cook for about 1 or 2 minutes more.
  • Add broth, water and cobs; bring to a boil. Reduce heat to low and simmer for about 15 minutes; remove and discard cobs. Add corn (except for cup of reserved kernels), salt and pepper to soup; simmer for 15 minutes more.
  • Puree soup until smooth in pot using an immersion blender (or in a food processor or in batches in a blender-but be careful not to splatter hot liquid). Garnish with red pepper, cilantro, scallion and reserved cup of corn; serve hot or at room temperature. Yields about 1 cup per serving.

1 tablespoon vegetable oil
1 medium onion, chopped
2 cloves garlic, pressed
1 stalk celery, chopped
1 grated orange, juice and zest of
1/2-1 teaspoon Tabasco sauce or 1/2-1 teaspoon other hot pepper sauce, to taste
2 lbs ripe plum tomatoes, chopped
8 ounces chorizo sausage, sliced
1 (13 ounce) can creamed corn
4 ounces corn chips
2 ounces sharp cheddar cheese

Steps:

  • Heat oil in sauce pan.
  • Add onion and cook, stirring until soft.
  • Stir in garlic and celery and cook, stirring, until celery is soft.
  • Add orange zest and juice, Tabasco and tomatoes and simmer covered 20 minutes While soup is simmering, cook sausage in ungreased frying pan until lightly browned.
  • Drain Blend or process tomato mixture until finely chopped.
  • Stir in corn, return to pan and heat through Just before serving, spread corn chips in broiler pan.
  • Sprinkle with cheese and place under broiler just until cheese melts Stir chorizo into soup and serve with corn chips.
