2 pounds ground beef
4 slices Swiss cheese
1 small onion, finely chopped
2 to 3 pickled jalapeno peppers, seeded and finely chopped
4 hamburger buns, split and toasted
Lettuce leaves and ketchup, optional

Steps:

  • Shape beef into eight thin patties. Top four patties with cheese, onion and jalapenos. Top with remaining patties; press edges firmly to seal. , Grill, covered, over medium heat or broil 4 in. from the heat for 8-9 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns. If desired, serve with toppings.

1 cup barbecue sauce
4 1/2 ounces green chilies, chopped and drained
2 tomatoes, seeded and diced
1/2 small red onion, minced
1/4 cup chopped fresh cilantro
1 garlic clove, minced
1 tablespoon red wine vinegar
2 teaspoons olive oil
1/4 teaspoon salt
8 (6 inch) fat free tortillas
1 cup fat-free refried beans, canned
8 scallions, finely chopped
1 cup reduced-fat monterey jack cheese, shredded
1/4 cup light sour cream

Steps:

  • Combine chicken, barbecue sauce and chiles in a large, nonstick saucepan; bring to boil.
  • Reduce heat and simmer, covered, until chicken is tender and cooked through, about 25 minutes Remove from heat and let cool.
  • Meanwhile, combine tomatoes. onion, chopped cilantro, garlic, vinegar, oil, and salt in medium bowl until blended. Set aside.

1 1/2 lbs ground round or 1 1/2 lbs extra lean ground beef
1/2 cup onion, finely chopped
1 tablespoon jalapeno pepper, seeded and minced
2 teaspoons low-sodium worcestershire sauce
3/4 teaspoon liquid smoke
1/4 teaspoon salt
1/8 teaspoon pepper
5 tablespoons jalapeno jelly, divided
5 tablespoons chili sauce, divided
1/2 teaspoon hickory-flavored barbecue smoked seasoning
cooking spray
6 (2 ounce) hamburger buns
6 curly leaf lettuce leaves

Steps:

  • Combine first 7 ingredients in a large bowl, and stir well.
  • Divide mixture into 6 equal portion, shaping into patties.
  • Combine 3 tablespoons jalapeno jelly, 3 tablespoons chili sauce, and 1/2 teaspoon smoke seasoning in a small bowl; stir well.
  • Prepare grill.

2 jalapeno peppers, seeded and finely chopped
2 tablespoons minced fresh cilantro
2 tablespoons light beer or water
2 dashes hot pepper sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound extra-lean ground turkey
3 slices pepper jack cheese, cut in half
6 dinner rolls, split
6 tablespoons salsa
6 tablespoons fat-free sour cream
6 tablespoons shredded lettuce

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. 1 onion, medium, finely chopped
1 garlic clove, finely chopped
4 cm fresh ginger, peeled and finely grated
500 g chicken thigh fillets, fat trimmed and cut into 3 cm pieces
2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1 cinnamon stick
chili powder, pinch
250 g cherry tomatoes
250 ml tomato puree (tomato passata)
80 ml thickened cream, light
1 cup water
120 g baby spinach leaves
4 cups basmati rice, cooked

Steps:

  • Lightly spray a 20cm base saucepan with oil and heat over a medium-high heat. Add onion, garlic and ginger and cook, stirring, for 3 minutes or until softened.
  • Add chicken pieces and cook, stirring, for 3 - 4 minutes or un til the chicken changes colour. Add garam masala, cumin, coriander, cinnamon stick and chilli powder and cook stirring for 1 minute or until fragrant.
  • Add tomatoes, passata, 1 cup of water and bring to boil. Reduce heat to medium and simmer for 20 minutes or until sauce thickens slightly. Reduce heat to low. Add cream and spinach and cook stirring for 1 minutes or until spinach wilts.
  • Remove and discard cinnamon stick. Serve butter chicken with the cooked basmati rice.
