1 1/2 teaspoons sea salt
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
1/8 teaspoon cayenne pepper

Steps:

  • Place a small saucepan filled with water over high heat.
  • Add edamame to pan and bring to a boil; boil for 3 minutes and drain.
  • Place edamame in a serving bowl and set aside.
  • To make seasoning, mix together sea salt, chili powder, ground cumin and cayenne pepper in a cup; toss with edamame until well-coated.
  • 1 Point yields about 1/3 cup per serving.

(Or cook a 16 ounce bag of edamame in a medium saucepan and make the Indian and Japanese varieties as well.) To make seasoning, mix together sea salt, chili powder, ground cumin and cayenne pepper in a cup; toss with edamame until well-coated. Yields about 1/3 cup per serving.

One of my favorite sushi restaurants had this yummy edamame dish, so I tried to duplicate it at home. I think I came pretty close.

¼ cup water
3 cloves garlic, minced
1 (16 ounce) package frozen edamame in the pod
¼ cup teriyaki sauce
2 tablespoons brown sugar
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 tablespoons sesame seeds

Steps:

  • Bring the water and garlic to a boil in a saucepan over high heat. Stir in the edamame, and cook until the edamame are hot, and the liquid has nearly evaporated, about 5 minutes. Reduce the heat to medium-high and stir in the teriyaki sauce, brown sugar, vinegar, and sesame oil. Stir constantly until the sauce has thickened and coats the edamame, about 4 minutes. Sprinkle with sesame seeds to serve.
