1 lb boneless center-cut pork loin, trimmed of all visible fat and cut into 1-1/2 inch cubes
1 cup water
1/4 cup cider vinegar
2 tablespoons reduced sodium soy sauce
3 garlic cloves, minced
1 small bay leaf
1/4 teaspoon salt

Steps:

  • Combine pork, water, vinegar, soy sauce, bay leaf, and salt in med saucepan.
  • Let stand 30 minute.
  • Bring mixture to a boil.
  • Reduce heat and simmer, covered, til meat is very tender, about 1 hours.
  • Remove bay leaf before serving.

4 (6 ounce) center-cut pork loin chops, lean
2 tablespoons pineapple juice
1 tablespoon low sodium soy sauce
1/4 teaspoon ground ginger
1/8 teaspoon garlic powder
1 large egg white, lightly beaten
1/3 cup dry breadcrumbs
1/4 teaspoon dried Italian seasoning
1/4 teaspoon paprika
1 dash garlic powder
cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • Trim fat from chops.
  • Combine juice and next 4 ingredients in a bowl; stir well.
  • Combine breadcrumbs, Italian seasoning, paprika, and dash of garlic powder in a shallow dish; stir well.
  • Dip chops in juice mixture, and dredge in breadcrumbs mixture.
  • Place chops on a broiler pan coated with cooking spray.
  • Bake at 350 degrees for 50 minutes or until tender, turning after 25 minutes.

1 teaspoon olive oil
2 onions, sliced
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 cup water
1/2 cup tomato sauce
1 tablespoon packed brown sugar
1 teaspoon chili powder
1 teaspoon dried oregano
1/4 teaspoon ground cumin
1 teaspoon cider vinegar
1 lb pork tenderloin
4 tortillas

Steps:

  • Preheat the oven to 450 degrees. Spray a pan with nonstick cooking spray.
  • Combine the brown sugar, chili powder, oregano, cumin, vinegar and 1/4 teaspoon salt in a small bowl. Rub all over the pork.
  • Put the pork in the pan and then into the oven for about 25 minutes.
  • Meanwhile, heat a large skillet over medium low heat. Swirl in the oil, then add the onions, sugar, the salt and the water. Cook uncovered, stirring occasionally, until softened and lightly browned, about 20 minutes.
  • Stir in the tomato sauce and simmer, uncovered for about 5 minutes so the flavor blends. Remove from heat.
  • Let the pork stand 10 minutes after removing from heat. While the pork rests, wrap the tortillas in foil and warm in the oven for about 10 minutes.
  • Slice the pork and stir into the onion mixture. Spoon about 1/2 a cup of the meat mixture onto each tortilla and fold up to eat.

1 1/2 lbs boneless pork shoulder, trimmed and cut into 1 . 5 inch chunks
1/2 teaspoon salt
1 teaspoon canola oil
1 (14 1/2 ounce) can low sodium chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 large onion, chopped
3 garlic cloves, minced
2 tablespoons dried chipotle powder
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1 (15 ounce) can hominy, rinsed and drained

Steps:

  • Sprinkle pork with salt. Heat oil in large nonstick skillet over medium-high heat. Add half of pork and cook, turning occasionally, until browned, about 5 minutes. Transfer to 5 or 6 quart slow cooker. Repeat with remaining pork.
