These cookies are your old classic boiled chocolate oatmeal cookie, but made lighter for those of us watching our weight!

1/2 cup light margarine
1/2 cup skim milk
2 cups Splenda sugar substitute
3 tablespoons cocoa
1/2 cup reduced-fat peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats

Steps:

  • Bring margarine, milk, Splenda, and cocoa to a boil in medium saucepan. Boil for 1 minute.
  • Remove from heat. Stir in peanut butter and vanilla until combined.
  • Stir in oats.
  • Drop by spoonfuls on wax paper or parchment paper.
  • Allow to cool completely before eating.

2 cups sugar
1/2 cup cocoa
1 dash salt
1/2 cup milk
1 teaspoon vanilla
1/2 cup chunky peanut butter
3 cups quick oats

Steps:

  • combine butter, sugar, cocoa, salt, milk, and vanilla in a saucepan and cook for 5 minutes.
  • stir in peanut butter.
  • remove from heat and add quick oats; mix well.
  • drop from a teaspoon onto wax paper; let cool.

¾ cup butter
½ cup white sugar
1 cup packed brown sugar
2 eggs
⅓ cup peanut butter
¼ cup water
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
2 cups rolled oats
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, brown sugar and white sugar. Beat in the eggs one at a time, then stir in the peanut butter, water and vanilla. Combine the flour and baking soda, stir into the creamed mixture. Finally, stir in the rolled oats and chocolate chips. Drop by teaspoonfuls onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until the cookies are lightly toasted on the edges. Remove from the baking sheet to cool on wire racks.

I recently developed a craving for peanut butter cookies, a challenge for someone watching their points. Found this on the Weight Watchers website and have modified it to boost the nutty flavor without changing the points.

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons reduced-calorie margarine (stick-variety) or 3 tablespoons light butter
4 tablespoons reduced-fat peanut butter
1/3 cup packed light brown sugar
1/4 cup sugar
1 large egg white
1 teaspoon vanilla extract
cooking spray

Steps:

  • Melt the margarine or butter in a small saucepan until it sizzles and just begins to brown. Remove from heat and freeze for 20 minutes, or until firm.
  • While butter or margarine is cooling, combine flour, baking soda and salt in a small bowl.
  • Combine margarine and peanut butter in another mixing bowl, beating on medium speed until blended and smooth. Gradually add both sugars and beat until blended. Add egg white and vanilla and beat until smooth. While beating on low speed, gradually add flour mixture and mix until just blended.
  • Transfer dough to a large piece of plastic wrap and roll into an 8-inch log. Wrap log in plastic wrap and freeze for 2 hours. (Note: You can make the cookie dough up to 3 days in advance and freeze until ready to bake.).
  • Preheat oven to 350ºF. Coat 2 large baking sheets with cooking spray.
  • Remove cookie dough from freezer and slice crosswise into 1/3 inch-thick slices; place slices 1 inch apart on prepared baking sheets. Bake until golden around edges, about 8 to 10 minutes. Transfer cookies to wire racks to cool completely.

2 tablespoons unsalted butter
1/2 cup sugar
1/2 cup brown sugar
1 banana, very ripe
1 egg
1 teaspoon vanilla
1 cup flour, fluffed to aerate before measuring
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups oatmeal (old-fashioned or quick)
1 cup coconut, preferably unsweetened

Steps:

  • Preheat oven to 350°F
  • Melt butter in a small dish in microwave, 10 seconds at a time.
  • Transfer to mixing bown.
  • With an electric mixer, thoroughly mix in sugars, banana, egg and vanilla.
  • Mix together flour, baking powder, baking soda, cinnamon, salt.
  • Mix in to the banana mixture.
  • Mix in oatmeal and coconut.
  • Drop dough by tablespoons onto a baking sheet lined with parchment.
  • Bake for 11-14 minutes until set and golden.
  • Cool 5 minutes and remove from tray right away to a cooling rack.
