Tasty baked tomatoes that I often make in the summer when I am dieting. Only 1 WW point for a whole tomato! I found recipe years ago in The Calculating Cook, a gourment cookbook for diabetics and dieters.

4 medium tomatoes
1/2 cup buttermilk
1/4 cup parmesan cheese or 1/4 cup romano cheese, grated
salt
fresh ground black pepper

Steps:

  • Cut tomatoes in half, seed, and place cut side up in broiler safe baking dish.
  • Pour 1 tablespoon of buttermilk into each tomato half then sprinkle top of each with cheese, salt and pepper.
  • Bake at 400 degrees Fahrenheit for 15 minutes; then place under broiler until lightly browned.
  • You may add oregano, basil, tarragon, garlic, or rosemary for a flavor change.

I got this recipe on another website but made it my own. It works with any fruit puree; I've tried apple and cantaloupe and banana. They are so good! I want to try pumpkin with pumpkin spice instead of cinnamon, YUM!

Number Of Ingredients 8

1/4 cup sugar
1 1/4 cups whole wheat flour
1/3 cup applesauce
1 teaspoon cinnamon
2 cups bran flakes
1 1/2 cups skim milk
1 1/3 teaspoons baking powder
2 egg whites

Steps:

  • Mix bran flakes and milk and set aside for 15 minutes.
  • Mix all of the other ingredients together, then add the bran mixture when it has sat for 15 minutes.
  • Pour into 12 muffins.
  • Bake at 350°F for approximately 20 minutes or until toothpick comes out clean.

6 large plum tomatoes, about 1 1/2 lbs
1/4 cup extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
2 cups fresh breadcrumbs
2 cloves garlic, smashed
1/4 cup fresh Italian parsley, chopped
1/4 cup shredded parmesan cheese or 1/4 cup asiago cheese (optional)

Steps:

  • Cut each tomato lengthwise into 6 wedges.
  • In bowl, toss tomato wedges with half of each of the oil, salt and pepper.
  • Arrange tomatoes, cut side up in 13x9 inch glass baking dish, roast in 400f degree oven for 30 minutes.
  • Meanwhile in bowl, combine bread crumbs, garlic, parsley and remaining oil, salt and pepper.
  • Remove tomatoes from oven, sprinkle with bread crumb mixture.
  • Roast until bread crumb mixture is golden, about 20 minutes.
  • Sprinkle with cheese, if using and return to oven for another 5 minutes, until cheese melts.

1 1/2 lbs lean ground turkey
1 cup uncooked quick oats
2 medium egg whites
1 large onion, finely chopped
1 medium garlic clove, chopped
1/4 cup fresh parsley, chopped
1 teaspoon dried oregano
1 1/2 teaspoons beef bouillon granules
1/2 teaspoon black pepper
1 1/4 cups barbecue sauce

Steps:

  • Preheat oven to 350.
  • Combine all ingredinets, except BBQ sauce, in a medium sized bowl.
  • Coat a baking shet with cooking spray.
  • Shape meatball imxture into 60 1" balls and place on baking sheet.
  • Bake at 350 until cooked through, about 25 minutes.
  • Transfer meatballs into a chafing dish or crockpot to keep warm.
  • Meanwhile heat BBQ sauce on stovetop or in microwave until hot.
  • Pour sauce over cooked meatballs, toss gently and serve.
  • Points figured for 2 meatballs per serving.
