One of the first dishes Southern cooks master is homemade pimento cheese. Every hostess may have her own special twist on the classic party dish, but this version will never let you down. Our best pimento cheese recipe gets a signature crunch from toasted pecans and a dash of heat from ground red pepper. Blended together with creamy mayonnaise and sharp Cheddar cheese, it's a combination that keeps guests coming back for seconds. Pimiento cheese dip may be an easy appetizer for entertaining, but there's just one way to mess up the recipe: pre-shredded cheese. In a dish this simple, texture is important. 1 1/2 cups mayonnaise, such as Hellmann's or Duke's
1 (4-oz.) jar diced pimiento, drained
1 teaspoon Worcestershire sauce
1 teaspoon finely grated onion
1 teaspoon ground red pepper
1 cup chopped pecans
1 (8-oz.) block extra-sharp Cheddar cheese
1 (8-oz.) block sharp Cheddar cheese
Celery sticks and assorted crackers

Steps:

  • Make the mayo mixture. In a large bowl, stir together mayonnaise, diced pimiento, Worcestershire sauce, grated onion, and ground red pepper until blended.
  • Toast the pecans. Toasting brings out the rich flavor of the nuts. Preheat your oven to 350°. Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. (Stirring helps to ensure even browning.)
  • Shred the cheese. Trust us - texture matters. Using the small side of a box grater, finely shred extra-sharp Cheddar cheese. Then use the large side of the grater to coarsely shred sharp Cheddar cheese. Fresh cheese makes a difference.
  • Stir and enjoy. Add pecans and shredded cheeses to mayo mixture, stirring until blended. You can store it in the refrigerator up to 1 week. Serve with celery sticks and assorted crackers, or make a grilled pimento cheese sandwich in a skillet or panini press.

This pimento cheese is the best! It's cheesy, tangy, peppery (spicy if you wish), and spreadable. Recipe yields 2 cups.

Number Of Ingredients 10

2 cups freshly grated extra-sharp Cheddar cheese
8 ounces cream cheese, cut into 1″ cubes and softened at room temperature*
4 ounces pimento peppers**, well drained and chopped if in strips
2 tablespoons mayonnaise (Duke's is traditional but I also like Sir Kensington's)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cayenne pepper (decrease or omit if sensitive to spice)
1/2 medium jalapeño pepper, ribs and seeds removed, and minced (about 1 tablespoon; omit if sensitive to spice)
Freshly ground black pepper, to taste
Salt, to taste

Steps:

  • In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and jalapeño (if using), and several twists of black pepper.
  • Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined.
  • Taste, and add more black pepper if desired, and/or salt for more overall flavor (I usually add a pinch of two). If you'd like your pimento cheese to have more of a kick, add another pinch of cayenne. Blend again.
  • Transfer the mixture to a smaller serving bowl. Serve your pimento cheese immediately, or chill it in the refrigerator for up to 1 week. Pimento cheese hardens as it cools; let it rest for 30 minutes at room temperature to soften.

Before we moved to Alabama the only encounter I had ever had with pimento cheese was the small jars of Kraft Pimento Cheese. My mom used it to stuff celery for a relish tray. I had my eyes opened when we moved south. Pimento cheese is a staple in the southern family diet. Needless to say I had to put my stamp on this...

4 Tbsp mayonnaise, the real thing
3 oz package cream cheese, softened
3 clove garlic, minced
1 tsp onion, finely grated
1 c pecans, chopped
1 tsp worcestershire sauce
1 small jar pimentos, diced, do not drain
12 oz extra-sharp cheddar cheese, freshly grated
couple dash(es) tabasco sauce
handful fresh parsley

Steps:

  • 1. Puree until smooth in the bowl of a food processor the mayonnaise, cream cheese, garlic, parsley grated onion, Worcestershire sauce and Tabasco sauce.
  • 2. Turn into a bowl; set aside. In the food processor, coarsely chop pecans. Add pecans and pimentos, with juice, to mayonnaise mixture.
  • 3. Now grate or shred int the food processor the 12 ounces of extra-sharp Cheddar cheese.
  • 4. Add to mixture in bowl. Stir well to combine. Allow to stand, refrigerated at least i hour. Even better the following day.

Scant 1/2 cup jarred pimento or other roasted red peppers (from a 7-ounce jar), finely diced
3 tablespoons Duke's, Hellmann's or other high-quality store-bought mayonnaise
1/2 teaspoon dried red chile flakes
Salt and freshly ground black pepper to taste

Steps:

  • In a large mixing bowl, place the cheddar cheese in an even layer. Scatter the cream cheese, pimentos, mayonnaise and chile flakes over the cheddar cheese. Using a spatula, mix the pimento cheese until it is smooth and spreadable, about 1 1/2 minutes.
  • Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

1-1/2 teaspoons Worcestershire sauce

3 ounces cream cheese, softened
1 -2 garlic clove, minced
1/4 cup chopped flat leaf parsley
6 -8 drops Tabasco sauce
1 (2 ounce) jar pimientos, undrained
3 cups finely shredded sharp cheddar cheese
1 cup pecan chips

Steps:

  • Combine mayonnaise, cream cheese, garlic, parsley and Tabasco (by hand or in food processor) until smooth.
  • Add undrained pimientos, cheese and pecans; mix well.
  • Cover with plastic wrap and refrigerate at least 4 hours to overnight to allow the flavors to blend.

4 tablespoons mayonnaise
1 (3 ounce) package softened cream cheese
3 cloves garlic
5 sprigs fresh parsley
3 dashes Pickapeppa Sauce
3 dashes Tabasco sauce
1 cup pecans
1 (5 ounce) jar diced pimentos, and all juice
12 ounces extra-sharp cheddar cheese

Steps:

  • Puree till smooth in processor the mayo, cream cheese, garlic, parsley and sauces.
  • Turn into bowl.
  • now, in food processor, process just till coursely chopped, 1 cup pecans; add pecans and pimentos, with juice, to mayo mixture.
  • Now grate cheese in food processor Put into bowl with remaining ingredients.
  • Stir well to combine.
  • Let stand, refrigerated, at least 1 hour.
  • Even better the next day.
