WONTON EGG CUPS
Made these with what I had in the fridge to take to a family gathering. Everyone loved them and they were the first plate emptied! I plan to make these over and over and change ingredients to whatever the mood and/or what I have on hand.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Cook and stir sausage in a small skillet over medium heat until browned, about 5 minutes. Drain excess grease. Let cool, about 5 minutes.
- Whisk eggs, cinnamon, salt, and pepper together in a bowl. Stir in sausage.
- Spray mini muffin tin with cooking spray. Press a wonton wrapper into each opening to form a cup. Fill cups with egg and sausage mixture. Sprinkle Manchego cheese on top.
- Bake in the preheated oven until eggs are set and lightly browned on top, 12 to 15 minutes.

EGG SALAD WONTON CUPS
Crispy wonton wrappers are a nice contrast to the creamy egg salad in this appetizer from our Test Kitchen. It's a mouthwatering alternative to traditional deviled eggs.

Steps:
- Coat one side of each wonton wrapper with cooking spray; gently press into miniature muffin cups, greased side down. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool., In a large bowl, combine the egg salad, onions and carrot. Stir in the bacon. Spoon about 1 tablespoon into each wonton cup. Garnish with tomatoes and parsley.
