1 Lb Large Scallops - thawed and prepped
1 Tablespoon Oil
Salt/Pepper
1-2 Lemons - cut into wedges
1/2 Cup Butter - melted
5 Garlic Cloves - grated
Chopped Fresh Parsley

Steps:

  • Thaw scallops completely if frozen. Preheat oven to 400ºF Toss scallops with oil, salt and pepper. Transfer to a large greased roasting dish. Arrange lemon wedges around the scallops. Mix melted butter, garlic, salt and pepper. Spoon mixture over scallops. Bake for approximately 15 minutes. Broil on high for 3 minutes. (Time will vary depending on size of scallops. For smaller scallops begin to check doneness at 8 minutes.) Serve topped with parsley.

4 tablespoons butter, melted
1 ½ pounds bay scallops, rinsed and drained
½ cup seasoned dry bread crumbs
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon dried parsley
3 cloves garlic, minced
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour melted butter into a 2 quart oval casserole dish. Distribute butter and scallops evenly inside the dish.
  • Combine the bread crumbs, onion powder, garlic powder, paprika, parsley, minced garlic and Parmesan cheese. Sprinkle this mixture over the scallops.
  • Bake in pre-heated oven until scallops are firm, about 20 minutes.

This is a delicious alternative to traditional deep-fried scallops. My family calls it their all-time favorite seafood dish.

1/4 cup all-purpose flour
1/4 teaspoon salt
Dash pepper
1/2 pound fresh or frozen bay scallops, thawed
2 tablespoons half-and-half cream
2 teaspoons butter, melted
1 tablespoon dry bread crumbs

Steps:

  • In a small bowl, combine the flour, salt and pepper. Toss scallops in flour mixture, a few at a time, and place into two greased 6 to 8-oz. baking dishes. Top each with half the cream, butter and bread crumbs. , Bake, uncovered, at 450° for 18-20 minutes or until scallops are opaque and topping is golden brown.

I came across this recipe many years ago in a magazine and don't know which one it was. Finally tried these for dinner and my husband loved them. It is a simple recipe, quick to prepare and tasty. Be sure to use 'real' parmiggiano-reggiano cheese!! You won't be disappointed!

Number Of Ingredients 6

4 dozen bay scallops
8 garlic cloves, minced
4 tablespoons dry white wine
4 tablespoons heavy cream
16 Ritz crackers, crushed
4 tablespoons parmesan cheese, grated

Steps:

  • In four small gratin dishes, add 1 tablespoon butter and 2 cloves of minced garlic to each.
  • Place in a 400* preheated oven until melted.
  • Remove and add 1 dozen scallops to each dish.
  • Top with 1 tablespoon wine and 1 tablespoon heavy cream, stirring to evenly coat the scallops.
  • Top each dish evenly with the crushed crackers and then sprinkle each with 1 tablespoon of the grated cheese.
  • Bake until hot and opaque, about 15 minutes.
  • Switch the oven to broil and cook until the crumbs and cheese are golden brown.
