SIMPLE WON TON SOUP
A simple broth loaded with delicious won tons. Why order out when you can easily do it yourself? Sorry, I guessed at the weight of the won ton package.

Steps:
- Chop the raw chicken breasts into very fine pieces and place in a medium bowl.
- Add green onions, ginger, sugar, cornstarch, soy sauce,salt, pepper and oil. Marinate for at least 1/2 hour.
- Place the broth ingredients in a large pot (dutch oven) and bring to simmer.
- Fill the won ton wrappers by placing about 1/2 teaspoon of filling into the center of each wrapper, moisten edges with water or egg white and fold into a triangle. Press edges to seal.
- Using a dutch oven, or large pot, bring about 8 cups of water to a boil.
- Drop the won tons into the boiling water a few at a time so that they are not over crowded (maybe 10 - 12 won tons) and let cook for about 5 - 7 minutes. They will float to the top as they cook.
- Remove from boiling water with slotted spoon and place the won tons directly into the broth.
- Simmer 10-15 minutes longer, then serve.

- Make broth: Simmer pork ribs, chicken, scallions, ginger, and water in a 6- to 8-quart tall narrow stockpot, uncovered, until meat is very tender and falling apart, 4 1/2 to 5 hours.
- Pour broth through a sieve into a large bowl and discard solids. Cool broth, uncovered, then chill, covered, at least 1 1/2 hours.
- Make wontons: Stir together pork, yolk, scallions, ginger, soy sauce, vinegar, sesame oil, salt, and white pepper in a bowl in 1 direction with your hand until just combined (do not overwork, or filling will be tough).
- Put 1 wonton wrapper on a work surface (keep remaining wrappers covered with plastic wrap). Spoon a rounded teaspoon of filling in center of square, then brush water around edges.
- Lift 2 opposite corners together to form a triangle and enclose filling, pressing edges firmly around mound of filling to eliminate air pockets and seal.
- Moisten opposite corners of long side. Curl moistened corners toward each other, overlapping one on top of the other, and carefully press corners together to seal.
- Make more wontons in same manner.
- Finish soup: Skim any fat from broth, then bring to a simmer in a 5- to 6-quart pot.
- Stir in bok choy, salt, and white pepper and simmer, uncovered, until bok choy is crisp-tender, 3 to 4 minutes.
- Add wontons and simmer, uncovered, gently stirring, until filling is just cooked through, about 3 minutes (cut 1 open to check).

This is my girlfriend Carol's recipe. I had never had this soup until she made it for me. I think it's great!

Steps:
- Place all ingredients from part 1 in a large enamel pot and simmer for 20 minutes.
- Mix together the onion, garlic, pork, salt and pepper, and soy sauce in a medium bowl.
- Lay out 10 won ton wrappers and place 1 tsp of meat mixture in the center of each.
- Moisten the edges with water, fold and seal.
- Take the two opposing points and pinch together.
- Set aside and repeat until mixture is used up.
- Add Won Ton's to Part 1, bring to a lazy boil and cook for 15 minutes.
- Serve with hot oil.

This isn't really a soup, strictly speaking. It's more like delicious dumplings with a spoonful or two of broth ladled over them. Perfection!

- For the Won Tons:.
- Mix all Won Ton filling ingredients together in a medium bowl.
- Spoon about a teaspoon of filling onto each Won Ton skin and, wetting the edges, fold in half to seal, or into whatever dumpling shape you prefer.
- Repeat until all filling is used.
- Heat 3 quarts lightly salted water to a boil in a large soup pot.
- Boil Won Tons about 5-7 minutes, or until cooked through. Test by cutting one in half with a knife, if unsure, to ensure filling is cooked through.
- For the Broth:.
- In a medium sauce pot heat broth, soy sauce, sesame oil, green onion and garlic to a boil.
- Add spinach and cook until wilted.
- In a shallow, pasta-style bowl place 4-5 dumplings and ladle spinach and broth over top.
WON TON SOUP WITH PORK AND SNOW PEAS
Tasty little "envelopes" of meat and vegetables in chicken stock seasoned with fresh ginger root, sesame oil and soy sauce. You can use purchased won ton wrappers, or make your own. Use home prepared chicken stock, or canned. The time spent on preparing this recipe is up to you. The recipe came from a basic cookbook that explains the art of Chinese cuisine. It's definitely a recipe you can "make from scratch," or take some shortcuts and still have an excellent won ton soup. My preparation time listed is just a guesstimate. If you choose not to make your own won ton wrappers, find them in the produce or freezer department at your market.

- Additional salted water is to be used to pre-cook won tons before placing in broth.
- Put water and 1 tsp salt in a stock pot; when all wrappers are filled, heat water to a boil.
- Combine stock ingredients (excepting snow peas,) in a 2 quart stock pot; gently simmer while preparing won tons.
- Mix all filling ingredients in a pie pan, then flatten mixture to cover the base of the pan; divide (as cutting a pie) into 12 wedges so each won ton will contain similar amounts of filling.
- Keep unfilled/filled wrappers covered with a damp towel to keep them from drying.
- Place each portion of filling on the center of a wrapper; moisten the edges of the wrapper with water, then fold like an envelope, making sure all edges are adhered.
- When all wrappers are filled, gently drop into boiling salted water; add 1/2 cup cold water and return to a boil, stirring gently so won tons don't stick to bottom of pan.
- When won tons begin to float, cook for an additional minute then remove from water and drain; won tons will adhere to each other, so separate them.
- Remove scallions/green onions and ginger slice from simmering broth and add halved snow peas and drained won tons; heat thoroughly, then portion 3 won tons in 4 bowls, with snow peas and broth divided among the bowls.

- Poach the chicken thighs in the chicken broth for 30 minutes.
- Add carrots, cilantro, cumin, salt and pepper.
- Remove chicken and debone; add meat back to broth without the skin or bones.

- TO MAKE THE WONTONS:.
- Place the scallops in a food processor.
- Blend the scallops into a coarse puree.
- Blend in half of the egg yolk (discard the remaining yolk).
- Transfer the scallop puree to a medium bowl.
- Stir the shrimp, cabbage, 1 tablespoon of soy sauce, 1 teaspoon rice wine, 1/4 teaspoon sesame oil, oyster sauce, 1 teaspoon ginger, red pepper flakes,(if using) and garlic into the scallop puree.
- Lightly dust a baking sheet with cornstarch.
- Place one wonton wrapper on a flat surface and place a generous teaspoon of the shrimp mixture in the center of the wonton wrapper.
- Lightly brush the edges of the wonton wrapper with a little water.
- Fold the wrappers in half, pressing the edges to seal and forming a rectangular-shaped dumpling.
- Moisten 2 folded corners with water then bring the corners together and press firmly to adhere.
- Place the wonton on the prepared baking sheet.
- Repeat with the remaining wrappers and shrimp mixture.
- TO MAKE THE SOUP:.
- Place the stock in a medium pot and bring to a boil over high heat.
- Add the remaining 2 tablespoons soy sauce, 2 tablespoons rice wine, 1 teaspoon ginger, red pepper flakes(if using) and 1/2 teaspoon sesame oil to the stock.
- Reduce the heat to a rolling simmer and add the seafood won tons.
- Allow to cook for approximately 4 minutes or until the filling is cooked through.
- Add the bok choy to the soup then ladle the soup into 4 serving bowls, dividing the bok choy and won tons evenly, and serve.
- Enjoy!
